Mix together 4 eggs🥚, 1/4 cup almond milk🥛, 1 tbsp maple syrup, and 1 tsp pumpkin pie spice 🎃in a shallow pan. .

Soak 4 slices of low-sodium sprouted whole-grain bread (I use @foodforlifebaking Ezekiel bread🍞) in your eggs mixture for 10 seconds on each side. .

Heat 2 tsp of coconut oil in a medium skillet then add the bread and cook for 2-3 minutes on each side (until golden brown). .

I ate mine with half of a large banana🍌, 1 tsp of maple syrup, and 2 tbsp of pecans. NOT PICTURED: I cooked the remaining eggs mixture 🍳and divided up into 4 so I could enjoy some eggs with my French toast, too! 😋
