☸Ingredients (serves 5):
-
1 x onion
4 x garlic cloves
1 x thumb of ginger
1 x red pepper
1 x carrot
1 x sweet potato
1/2 × tin of butter beans
200g x mushrooms
1/4 × bunch of scallions
1 x tin of coconut cream
1/2 × tin of chopped tomatoes
1/4 × pint of water from boiled sweet potato
1/2 × Knorr veg stock pot
squeeze of 1/3 × lime
2 x Tbsp tomato puree
1.5 × Tbsp extra virgin olive oil
1.5 x Tbsp tamari
1 x Tbsp maple syrup
1.5 × heap Tbsp mixed herbs
1 x heap Tbsp cumin
1 x Tbsp paprika
1 x heap Tbsp turmeric
3/4 × Tbsp ground coriander seed
1 x tsp fround fennel seed
1/4 × tsp medium chilli spice
1.5 x tsp sea salt
3/4 x tsp coarse black pepper

☸Method:
-
⚀Boil cubed sweet potato for 10 minutes until tender throughout.
-
⚁Saute diced onion, garlic and ginger in hot extra virgin olive oil and tamari on medium heat for 2 minutes.

⚂Stir in chopped carrot and pepper, mixed herbs, sea salt and coarse black pepper for 4 minutes on high heat.

⚃Stir in tomato puree and all spices for 30 seconds before add in in coconut cream, tinned chopped tomatoes, hot water from the sweet potato, Knorr veg stock pot, maple syrup and fresh lime juice and bring to simmer for 2 minutes.

⚄Stir in cooked sweet potato, rinsed butter beans, chopped mushrooms and scallions and cover over on low heat for 5-10 minutes before serving with wholegrain rice.

✅ 1 Red onion - Diced

✅ 1/2 Cup cooked Amaranth
✅ 1/2 Cup cooked Quinoa
✅ 1 Tsp Whole grain mustard
✅ 2 Tsp Smoked paprika
✅ 2 Tsp Cummin
✅ 1 Tsp Celtic salt
✅ 1/2 Tsp Pepper
✅ 1/2 Cup Walnuts - Blended
✅ 2 Tbsp Nutritious yeast
✅ 1 Cup fresh Beetroot - Grated

✅ 1 Can black beans - Drained and mashed

✅ lightly fry onion and garlic.
✅ Combined all ingredients into a bowl and mix well.
✅ Shape into patties (Make 6 to 8)
✅ Place in fridge for 20min to firm up
✅ Cook in oven at 200 degrees celsius for 20 to 30mins.
