Chewy almond cookies with golden dust!
Our all time favourite Christmas cookies. They can be made all year around and also taste great as a dessert together with ice cream😊
They are sweet, chewy, yummy and gluten free! Give it a try and you won't regret it!
You need about:
500 g almonds
about 4 egg whites
500g icing sugar
Remove the peal from half of the almonds. 
Add peeled and non peel almonds in a blender and mix until it's like almond flour. Add powdered sugar and the egg whites and knead well until its a firm dough.
Wrap the dough in plastic film and leave to cool a few hours in the fridge. 
Roll the dough out into finger thick sausages and cut them in about 6 cm long pieces. Place them on baking paper on a baking tray and cook at 200 ° C for about 10 minutes. Leave them to cool before you decorate with melted chocolate or icing and some golden dust if you fancy! Keep them in air tight box or freeze them to make sure they survive until Christmas ☺️

Tomato nest with pancetta, eggs and Gruyere!
Kick off your Tuesday with this healthy and colourful breakfast. Cut the top of a big tomato and carve out the inside. Place on a plate and cook in the micro for one minute. Fry up chopped pancetta (or bacon) and add a few cracked eggs and some grated Gruyere cheese. Mix well and season with salt & pepper if needed. Add the cooked egg mix into the baked  tomato, fill up your coffee cup and have a great day 💛

Hva med å starte dagen med denne sunne og fargerike frokosten.? Skjær toppen av en stor tomat og grav ut innholdet. Ha den på et fat og bak i microen i ett minutt. Fres opp hakket pancetta (eller bacon) i stekepannen, knekk over noen egg og bland i raspet Gruyere ost. Kan erstattes med annen smakfull ost. Rør godt sammen og smak til med salt og pepper. Ha den stekte eggeblandingen i den bakte tomaten, fyll opp kaffe koppen og ha en fin tirsdag 💛

Crème brûlée with orange and cinnamon!
This is a perfect dessert on a regular Sunday or even Thanksgiving and other festive events lining up before Christmas. It's gluten free, very easy to make and doesn't have to be baked in the oven. 
Serves about 6-8 people. 
8 egg yolks, 
50g sugar, 
4 teaspoons cornstarch, 
2 teaspoons cinnamon, 
2 teaspoons grated orange zest, 
1 l cream, 
1 teaspoon vanilla sugar, 
Approximately 300 g brown sugar for caramelisation. ---->Whisk the egg yolks with sugar and cornstarch in a thick -bottomed saucepan over low heat. Pour in the cream little by little while stirring. Add the cinnamon , vanilla sugar and grated orange zest and let it simmer for about 8 minutes while stirring. Pour into suitable serving bowls, cover with plastic film and let it sit in the fridge for at least 1 hour. Before serving, mix brown sugar with 1 teaspoon cinnamon and 1 teaspoon grated orange zest. Mix well together and sprinkle over the pudding. Use a torch and burn the sugar until golden brown and caramelized . Garnish with a little berry and a nice little chocolate if you fancy 😊❤️

Pies with homemade lemoncurd and raspberries!
You can never go wrong with lemon curd, raspberries and meringues. A nice little Saturday treat that's made in a flash! Buy sweet pastry dough or make it yourself. Roll out until 0,5 cm thick and cut out circles with a glass or cookie cutters. About 8 cm i diameter. Place them on baking paper in individual mini pie trays or in a metal muffin tray that holds several. Cook in stove on 200 degrees for about 15/20 min. Keep an eye on them the so they don't get burnt and let them cool off before decorating them. 
While they cook you can prepare the lemoncurd:
2 lemons
2 eggs
2 decilitre sugar
About 60 grams of butter
---->Wash and scrub the lemons before use. Grate the lemon zest and squeeze out the lemon juice. Whisk eggs and sugar in a heatproof bowl and place the bowl over a pan of gently simmering water. Add the lemon juice and grated zest and whisk until the cream thickens. Finally, whisk in butter in small pieces. Let it cool off before filling the pies. Spoon lemon curd into the pies and decorate with crushed meringue and a few raspberries😊
If you have leftover lemon curd it should be stored in a sterilised jar with a lid. Keep in the fridge until ready to use.
