Avocado Pasta with a fresh salad 🍃🍝❤️ by @emilieeats

Ingredients:
1 16oz bag of brown rice pasta (or pasta of choice)
1 8-ounce pint cherry tomatoes, halved (about 1½ cups)
1 cup fresh basil, chopped
1 avocado, chopped
¼ cup balsamic vinegar
2 tablespoons olive oil
3 cloves garlic, minced (about 1 tablespoon)
1 tablespoon fresh lemon juice
1 teaspoon maple syrup or agave nectar (optional)
½ teaspoon salt
¼ teaspoon pepper

Cook pasta according to package directions. Drain; place in a large bowl.
Add tomatoes, basil and avocado. Stir until the ingredients are evenly mixed.
In a small bowl, whisk together balsamic vinegar, oil, garlic, lemon juice, maple syrup, salt, and pepper. Pour onto the pasta; stir to combine. Enjoy!

CARAMEL APPLES 🍏🍫💚 Featuring @the_blossoming_vegan

Recipe (makes 4):
16 soaked dates in water (10 min)
1/4 cup almond milk
1 tbs. peanut butter (or other nut butter)
1 tsp. vanilla extract
4 granny smith apples
Additional Toppings:
Melted Vegan Chocolate
Chopped Peanuts
Coconut Flakes
Goji Berries

Add the pitted dates to a food processor or blender along with the non-dairy milk, peanut butter, and vanilla extract. Blend well, stopping to scrape down the sides often until you reach a smooth caramel. It will be thick and sticky, so it might take awhile and lots of stopping to scrape the sides before everything is blended well.

Push a stick into the center of each apples to create a handle.

Use a spatula to evenly spread a thick layer of caramel over the apples.

If you don't want any toppings, you can smooth the caramel down by wetting your fingers and lightly rubbing away any bumps.

If you want to use toppings, just roll the caramel apples into toppings of your choice. Enjoy!

Vegan Pad Woon Sen 🍃🍜💜 by @nourishwithplants

Ingredients:
Starch:
Rice noodles

Produce:
1 cup shiitake mushrooms (sliced)
1 cup broccoli florets 
1/2 red cabbage (chopped)

Spices:
Salt
Pepper
Crushed red pepper
(All spices to taste)

Other:
2 tbsp Sesame oil
1/4 cup Soy sauce
1 tbsp Coconut sugar

In a medium fry pan:
Sauté the broccoli and mushrooms in sesame oil over medium heat. Season with salt, pepper and crushed red pepper 3-5 minutes. Then add the cabbage and sauté an additional minute. Remove from heat. 
In the meantime, prepare the rice noodles. Boil water 2 cups of water. Add desired amount of Noodles to the boiling water for about 2 minutes and drain.

Transfer the veggies and the noodles into a large wok on low/medium heat.
Add a little more oil, salt, pepper, crushed red pepper to taste. Then add the soy sauce and coconut sugar. Tossed it all together for 2 minutes and then serve. Enjoy!

We saY ToMAtO! Simple, easy and quick meal with heirloom tomato bruschetta. This is how I make it: preheat the oven to 400 °F ( around 200 °C) . Cut ciabatta bread in half horizontally and put on a baking sheet (cut side up). Drizzle some olive oil over. Put the baking sheet in the oven for about 10 mins or until the toasts are lightly brown. Take the baking sheet out. While still hot, lightly rub cut side of the toast with garlic. Slice the ciabatta had into 3-4 inch(7-8 cm)-long pieces. Lay the sliced heirloom tomatoes over the bread. Tear basil into pieces, and scatter on top. Season with salt and pepper. And eat up!
