Our heritage-breed Green Circle Chicken was a chef exclusive, but we decided to let you in on the secret. These old-breed chickens are raised longer than the others in the Green Circle program, for a more intense flavor.
With head and feet left on, and giblets inside, this a chicken that keeps on giving. Save the bones, and use the heads and feet, to make a rich, gelatin-filled stock.
Featured on the front page of The New York Times and CNN, this unique chicken was inspired by the common sense, waste-nothing philosophy of days past, when chickens lived on vegetable scraps and roamed freely around farmyards and pastureland.
In that tradition, we raise our chickens on a diet of surplus vegetables and trimmings collected from commercial kitchens and farmers markets. By saving these vegetables from their fate in a landfill and turning them into nutritious chicken feed, we raise healthier birds and contribute to a better world.
Not only are they fed well, these chickens are certified humane, making them rare birds indeed. They are air-chilled during processing, which means you get nothing but pure chicken flavor, not retained water.

Happy Monday ☕️ Instead of my usual coffee routine, I decided to make my favorite matcha tea latte this morning. Matcha is packed with disease-fighting antioxidants/catechins, helps boost memory/concentration, and is a powerful detox for the body due to high levels of chlorophyll 🌿 be careful where you order from - matcha latte from Starbucks has >30g of sugar per serving✖️for a healthier option, try my recipe 👇🏽
1/2 cup hot water
1/2 cup almond/coconut milk
1 tsp matcha powder (use whisk to mix in with water/milk)
1 tsp of honey or agave nectar
Dash of vanilla bean extract
Garnish with cinnamon stick
Makimono in Atlanta, GA. I had a good time at Krog Street Market and enjoyed the food way more than Ponce City Market. This sushi roll is the lambada roll with salmon and spicy tuna. The spicy mayo on top really added a kick! 🍙 I won't say no to fresh sushi. Happy Monday everyone!
Atlantans, the next time Scenic City Super Club rolls around in Chattanooga I suggest hopping in your car and going. It’s a seasonal dinner organized by Erik and Amanda Niel of Easy Bistro, and this dinner’s guest chef was Rob McDaniel of SpringHouse in Lake Martin, AL. Here’s one of the dishes: smoked quail with mushroom stuffing, farro pilaf, and roasted beets.
