Meal prep Monday: New recipe by @ChefLiv Chicken jalapeño & onions seasoned and topped with special homemade sauce. 
Recipe: chicken breast or chicken thigh -Season the chicken with jalapeño, onions, Lemon, salt, pepper, dry basil. -Let it marinate for 15 minutes. -Cooking wear used: Electric Skillet by Cooks brand you can purchase one from JCPenney, very easy to use and you can cook while sitting down on a kitchen chair -Using butter or olive oil, sauté green peppers, onions and small tomato. -Then add the seasoned chicken and let it cook for ten minutes then start adding some fresh vegetables like zucchini, red potatoes, carrots or whichever veggies you prefer. -Cover the skillet and let the chicken cook for 25 minutes in 350 degrees. -Chef Liv Special sauce: BBQ, Shirache, buffalo, hoisin sauce and dry basil -Mix the four sauces together then you can add it while the chicken is cooking to get the flavors or you can have it on the side if it's too spicy.

Dalam memilih sumber karbohidrat yang baik dan bersesuaian dengan keperluan tubuh, beberapa konsep boleh dipertimbangkan, antaranya:

1) Karbohidrat ringkas Vs Karbohidrat kompleks
2) Indeks Glycemik (Glycemic Index atau G.I)
3) Muatan Glycemik (Glycemic Load atau G.L)
.
Karbohidrat ringkas adalah lebih cepat untuk dicernakan seterusnya digunakan dalam kitar tenaga. Hal ini kerana karbohidrat ringkas sudah terdiri dari struktur yang sedia ringkas. .
Contoh karbohidrat ringkas adalah monosaccharide seperti glukosa atau fruktosa (terdapat dalam buah seperti buah kurma), dan juga disaccharide seperti maltosa dan sukrosa (gula putih). Dalam erti kata lain, mereka adalah gula ringkas.

Pengambilan sumber karbohidrat ringkas biasanya bersesuaian apabila paras glycogen dan gula dalam darah adalah rendah. Sebagai contoh .
1) ketika bangun dari tidur (overnight fasting), 2) ketika berbuka puasa, 
3) selepas bersenam dan 
4) apabila badan mengalami hypoglycemia secara mendadak (gula darah terlalu rendah, biasa berlaku pada mereka yang ada penyakit Diabetes). .
Berbeza pula kisahnya dengan sumber karbohidrat kompleks, ia adalah lebih lambat untuk dicernakan kerana strukturnya terdiri dari rantaian polysaccharide (kanji) yang panjang, dan biasanya ia wujud bersama sumber serat (cellulose). (Rujuk posting saya sebelum ini).

Justeru, sumber karbohidrat kompleks sesuai diambil ketika fasa kurang aktif yang memerlukan bekalan tenaga secara perlahan namun berpanjangan. Sebagai contoh ketika makan malam atau ketika bersahur (persediaan sebelum puasa).

Konsep karbohidrat ringkas dan karbohidrat kompleks ini amat berguna buat mereka yang masih baru dengan nutrisi. Atau buat mereka yang ingin menjadi lebih 'praktikal' (mudah) dalam memilih makanan yang baik. Namun disebabkan konsep ini terlalu umum, beberapa persoalan mungkin akan timbul. .
