Asparagus
1 pound thin/medium asparagus, ends trimmed
1 tablespoon olive oil
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
Shrimp
1 1/2  pounds medium uncooked peeled shrimp deveined*
1 tablespoon olive oil
2-3 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper
1/8-1/4 teaspoon red pepper flakes
3 tablespoons chopped fresh parsley
1 1/2 tablespoons lemon juice or more to taste
3 tablespoons butter, cubed
Serve with
Pasta
Rice

Directions:
Preheat oven to 400 degrees F.
Line a Jelly Roll Pan (10x15) with foil and lightly spray with cooking spray. Add asparagus and drizzle with 1 tablespoon olive oil. Add 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon pepper. Toss until evenly coated then line asparagus in a single layer. Roast for 4-6 minutes depending on thickness.
Meanwhile, remove tails from shrimp.
Remove pan from oven and push asparagus to one side of the pan (keep in a single layer). Add shrimp and drizzle with 1 tablespoon olive oil. Add 2-3 minced garlic cloves (or more to taste), 1/2 teaspoon salt, 1/4 teaspoon paprika, 1/8 teaspoon pepper, 1/8-1/4 teaspoon red chili flakes and fresh parsley. Toss until evenly coated then line shrimp in a single layer.
Top asparagus with 1 tablespoon cubed butter, evenly spaced. Top shrimp with 2 tablespoons cubed butter, evenly spaced. Roast for 6 minutes or just until shrimp is opaque.
Remove pan from oven and drizzle with lemon juice. Season with additional salt and pepper to taste. Serve with pasta, rice, etc.

💁Comer berenjenas nunca pudo ser TAN rico😋
Pizza los carb a base de berenjenas:
👉Cortar una berenjena a lo largo y dejar en agua con sal por 15 mins (para quitar él sabor amargo)
👉Lavar bien las berenjenas y colocar en bandeja (previamente aceitada para que no se pegue)
👉Añadir pizca de sal a cada rodaja y poner pasta de tomate sobre cada una (yo prepare la pasta con dos tomates rallados, un poco de pimentón y cebolla, curcuma y polvo chile cocinando a fuego bajo hasta lograr consistencia)
👉Agregar toppings de preferencia, yo agregue espinacas picadas, pechuga de pollo y queso de cabra
👉Llevar a horno previamente caliente hasta dorar
👉Disfrutar esta delicia 😋😋😋

today wasn’t the best day❌...there was a lot of stress & snacking. they happen, i’m trying to not beat myself up about it. i made a point to go for a run 🍂 the minute the clock clicked 5pm. i prob ate half a jar of @eatnuttzo 🥜(literally the best nut butter i’ve ever tasted), a minimum of 6 🍯 honey/coconut oil treats (from #healyourgutcookbook), & 2 dried figs (stolen from my husband’s stash). tomorrow is another day, hopefully i don’t eat anything else today...

TEPPANYAKI DE RES 
CON VERDURAS 🍄🐮
Acompañado de aguacate y quinoa 🥑🍚
➖➖➖➖➖➖➖➖➖➖➖➖➖➖
NECESITAS 👩🏻‍🍳
🍄 Champiñones o portobellos.
🐮 Filete de res.
🌳 Brócoli.
🌰 Cebolla.
🌶 Pimientos rojos, amarillos, verdes.
🥑 Aguacate.
🍚 Quinoa cocida.

PREPARACIÓN 👩🏻‍🍳
✔️ Picar todas las verduras en cuadritos medianos.
✔️ Precalentar el sartén. (Añadir un poquito de PAM o aceite de coco con una servilleta).
✔️ Poner las verduras al sartén (primero la cebolla, de ahí el los pimientos, brócoli,  y al final los champiñones).
✔️ De ahí tapar las verduras y dejar cocer a fuego lento.
✔️ Sazoné con ajo en polvo, pimienta en polvo y agregué un poco de Salsa de soya baja en sodio. (la consiguen en @superamamx , Soriana ).
🐮 Acompañe con filete de res  a la parrilla ( sazonada con pimienta y ajo ).
🍚 Y con quinoa cocida, la pongo a hervir en agua durante 10 a 15 min; sazonar al gusto. ➖➖➖➖➖➖➖➖➖➖➖➖➖➖
Tú puedes añadir tus porciones de grasas/proteínas y carbos que más te gusten 🤗
🖤 El teppanyaki de verduras se me hace una excelente opción para complementar tus comidas o cenas para aquellos que les encantan las verduras!! Puedes ir cambiando las verduras para no aburrirte y cambiarlas por las que más te gusten 🤗

Kesar (Saffron) and Rose Coconut Laddoos (bliss balls) that are #glutenfree, #vegan and #refinedsugarfree to celebrate Diwali (Festival of Lights) with. I was inspired by @veganricha coconut laddoo recipe but I modified it with the ingredients I had at hand. Recipe ⬇️. Growing up, Diwali was a festival that we celebrated over multiple days with lights and flower decorations around the house, plenty of food and most importantly, tons of ghee and sugar laden sweets!! They were all consumed in copious amounts with none of the guilt.  I love the flavor of Indian sweets but given that most of them are made out of milk solids and/or Ghee,  to veganize them, one has to get a little creative. Thank you @veganricha! These laddoos were amazing and had all of the flavors I remembered from my childhood but just more compassionate and of course, healthier!

Recipe :
....................................................... I heated up about a 1/4th cup of coconut cream, 1tbsp coconut oil, 1 tsp rose water, 2 tbsp saffron soaked almond milk in a pan. To this I added puréed dates, coconut sugar (per your taste), 1/8 tsp salt, crushed cardamom powder and around 1.5 cup + 2 tbsp of shredded unsweetened coconut flakes. Just mix it till it all comes together, turn off the heat, let it cool and mold to shape of choice. I then rolled them in some shredded coconut and done. The dates and coconut sugar is what gives it the dark caramel-ey color. .

They say abs are made in the kitchen and they are NOT wrong!! I used to think doing cardio and hundreds of different crunches would inevitably lead me to the abs of my dreams! KEEP DREAMING! That just isn't the case if you don't make your nutrition a focus as well as your fitness.

Eating a clean diet accompanied by a nutrition plan to fuel your workouts, and your body are THE ONLY WAY to get those abs.
