Further refining my falafels.
Added some Panko, switched to dried chickpeas, and stuffed with feta.
They came out awesome.
Tossed on a pita with tahini tzatziki, maple harissa, and pickled cucumbers and beets.
I think I've finally figured out it, no squishy chickpeas, extra crispy bread crumbs. I was impressed with these ones, and am excited to make more.
Lunch was so good yesterday that I had it for dinner too. So on a spinach wrap I had falafel, green salad, carrot, tomato and a sprinkle of cheese. My goodness it was delicious. I used Lisa's Mediterranean falafel mix. It's so goooooood, you can eat it just as it is but I cooked it in a little bit of coconut oil to give it a bit of extra flavour. TIP FOR THE PIC: it's really easy to substitute your food for other things, like on this wrap I needed a source of protein, I often just have chickpeas but falafel is pretty just chickpeas so ate that instead!! If you don't feel like having carrot, have celery or cucumber instead :) 🌸STAY MOTIVATED🌸
