This morning I made myself some Easy Fat Free Vegan Blueberry Muffins! (I adapted this recipe: http://www.food.com/amp/recipe/very-simple-blueberry-muffins-278278)
Ronda's Easy Fat Free Vegan Blueberry Muffins
1 1/2 Cups Self Rising Flour
1/2 Cup Sugar
1/4 Cup Applesauce
3/4 Cup Soy Milk
1 Cup Blueberries
Combine and bake at 400 degrees for about 30 minutes. Sprinkle with sugar before putting in oven (optional). You could use any fruit you wanted. Raspberries sound especially good to me. Also, I think the addition of vanilla would be good. The next time make these with blueberries I will add either lemon zest or thyme. I am kicking myself that I didn't today, both were on my counter!
