Breakfast for dinner! 🥓🥚🧀
I made savory breakfast pastries earlier this week and am finishing the leftovers for dinner. These were so delicious and simple to make!
I made a homemade puff pastry for these, but you could also use store bought. Scramble some eggs with onion and spinach. Add scrambled eggs, cooked bacon, and cheese to the puff pastry. Roll/fold up and bake at 400 F for about 15 minutes. Enjoy!!

Jalapeno, Bacon, Chicken, Cauliflower Gratin. (Low carb)
1 head of Cauliflower
1 rotisserie chicken (breast only)
1 cups milk
1 cup heavy cream
3 tbsp almond flour
2 tbsp Butter
1 cup tillamook cheddar cheese
1/2 cup parmesan
1/2 cup mozzarella
3 strips of thick cut bacon (precooked)
1 sprig of green onion (for garnish)
Salt and pepper
Take the head of Cauliflower and chop up to bite sized pieces. Put on a pot of salted water. Let boil.
Par cook the cauliflower for 5-6 mins. Drain and set aside.
White sauce (roux)
Take the 2 tbsp of butter and melt. Stir in 2 cups of milk and cream. Take your almond flour and if it's too course wiz in the food processor so it's more flour like. Add to hot milk and continue stirring over the heat working constantly so it doesn't burn. Add 1/2 cups cheddar, 1/2 cup parmesan, and 1/2 cup mozzarella. Stir until melted. Lots of pepper, good few pinches of salt.
Take glass 9x12 (or whatever) dish and lay down 1/3rd of sauce. Then lay out the cauliflower. Layer cubed chicken, bacon, and diced jalapeno. Add the rest of the white sauce. Sprinkle with the last 1/2 cup cheddar. Salt and pepper again on top. Bake at 350 for 25 mins until bubbly.
Everybody liked it. This will be on the permanent low carb menu.
Cooking with Sydney Tour: Last summer I visited family and learned out to make their some of their specialties. This video features my grandpa AKA my papa - he is the master of the grill and makes the best beer brats and pork ribs! Peep my great aunt towards the end exclaim: "they're finger lickin' good!" 😋😋 Needless to say, I'm definitely looking forward to this summer's tour! 🎉🙌🏽
