Undeniably one of THE best stir-frys I've ever made😍 Thank you @traderjoes for your precut stir-fry vegetables because it cut my cooking time in half! We are having a bit of fall weather here today - a little rain, and cooler temps, so I made this wonderful soup/stew. It’s easy to make, vegan, chock full of vegetables and it is delicious! I’m feeling all warm and cozy!

What is your go to “cool weather” meal?
.
CURRIED FRENCH LENTILS

Serves 4 (makes about 8 cups or 4 bowls)
Preparation Time: 20 minutes Cook Time: 45 minutes
.
INGREDIENTS: 
6 cups water 
1 cup French Green lentils 
1 yellow onion, chopped 
1 small yam or sweet potato, diced (about two cups) 
2 cups small cauliflower florets 2 ribs celery, sliced 
1 can (14.5-ounce) diced, salt-free tomatoes 
2 teaspoons curry powder 
2 teaspoons dried green herbs (like a French or Italian blend) 
1 teaspoon granulated onion 1 teaspoon granulated garlic 
4 cups greens cut into bite-size pieces (like kale, chard, spinach, collards, beet greens)

INSTRUCTIONS:

1. In a soup pot on high, bring the water and lentils to a boil. Reduce heat to medium and cook for 20 minutes (a low boil).

2. Add the onion, yam/sweet potato, cauliflower, celery, tomatoes (including juice), and the four herbs and spices. Cook for 10 minutes at the same heat. Add greens, and cook for 5-10 more minutes (spinach, chard and beet greens won't take as long to cook as kale or collard greens), until potatoes and greens are tender. Serve as is or over cooked brown rice.

Even when I'm sick I still crave meals like this. Sweet potato always hits the spot no matter the situation 😌 I had one of those with chickpeas, raw sugar snap peas, tomatoes, cucumber, and mashed avocado. This is probably my favorite meal at the moment! 
I've spent today resting. My body just does not want to do anything! It's so tired and worn down, so I'm trying to listen to it. If I'm being honest, resting is so hard for me, but I know it's what's best in order to recover fully! So I'm drinking some tea and taking a break from stressful activities for the day 😊

Perfect comfort meal food for the gloomy day in San Diego.  Braised beef and mushroom stew (with red wine, onions, carrots) and brown rice.  Splashed some hot sauce on top and it definitely warmed me up!

Oggi è andata male sotto ogni punto di vista. Ho saltato tutti i pasti tranne mezza cena e, per quanto sia assurdo, non sento la fame, né la stanchezza post camminata. Mamma mi ha convinta a mangiare solo dopo che mi ha detto che a volte le sembra di parlare con due me, mi ha messo paura.
Nel pomeriggio ho parlato con i miei amici di Barcellona e loro hanno paura perché sta scoppiando la guerra civile quindi hanno annullato la prenotazione della casa, almeno non è stata colpa mia ufficialmente, e almeno ci rimborsano perché la motivazione è seria. Ci sono rimasta male. Adesso è veramente reale... Spero che domani sia come tutte le volte che sono stata male, spero di svegliarmi bene, spero di riuscire a vivere un po'. Vi auguro una buona notte❤

Sweet potato brownies by @sheloveseating 💖
Recipe (servings 16 squares):
750 g sweet potato 2 medium sized. 300 g medjoul dates approx. 15 without pit. 200 ml oat milk. 100 g ground hazelnuts. 35 g ground oats. 4 tbs cacao powder. 1 tbs chia seeds. 2 tsp baking powder.
Peel the sweet potatoes, cut them into chunks and steam or bake them until soft (approx. 20 minutes). Preheat the oven to 200°C.

Sweet potato brownies by @sheloveseating 💖 Recipe (servings 16 squares): 750 g sweet potato 2 medium sized. 300 g medjoul dates approx. 15 without pit. 200 ml oat milk. 100 g ground hazelnuts. 35 g ground oats. 4 tbs cacao powder. 1 tbs chia seeds. 2 tsp baking powder. The players are, from the top, clockwise: avocado, quinoa, roasted root vegetables (sweet potatoes, purple yams, rutabaga), hemp seeds, edemame, roasted tofu, sunflower seeds, broccoli, pumpkin seeds, adzuki beans w/miso, and dried goji berries in the center. Sesame seeds and nigella sprinkled on top.

The dressing is a quick blend of 1T sesame oil (optional), 1/2 c water, 1/4 c tahini, 1/4 tsp grated ginger, 1T liquid aminos (or soy sauce/tamari), 2T lemon juice, and one pitted prune (for some natural sweetness)

Before I toss all of this goodness together, I save out a couple of items because my kids are still in that phase where they don't like their food all mixed up. These vegetables pair nicely with their meal of mac & cheese. Or a cheese quesadilla. Also, a grilled cheese sandwich. You get the point.

I've always loved baked goods however, since adopting a more wholesome way of eating I must admit I don't enjoy them as much (at least the unhealthy ones). Today was no exception, I was craving a chocolate chip bagel but instead opted for a yummy and healthy avocado toast sprinkled with everything but the bagel seasoning, cashew cheese (from @minimalistbaker ) toast, and some fruit (grapes, peaches and strawberries--not all pictured). Don't get me wrong, I'm not perfect I do indulge once in a while, and I still have a bit of a sweet tooth, but I find it much more satisfying when I indulge in healthier options like fruit or a wholesome baked good.  Your taste buds really do change and what once you thought was "tasty" you find is excessively sweet or salty and no longer enjoy to the same degree.  On those few occasions when I find myself in a position to taste something I'm no longer used to, not only do my taste buds not like it but I can actually feel its effect in other ways. Give healthy a try, you won't regret it.  It's not easy to change habits and you may have set backs but you can do it 💪🏼😊!! This was a much more satisfying breakfast than any bagel I could've had.  The cherry on top is that if you have little ones to feed they'll happily crave and request healthy things too.  Their little bodies can also feel the difference between a healthy and a not so healthy meal option.  You'll feel awesome knowing you're laying the foundation for healthy eating habits that'll stay with them forever 👌🏼. My little one never tires of oatmeal so I made her some with almond milk, golden raisins, blueberries, strawberries, & peaches (no sugar needed). Keep eating that rainbow my friends 🌈🌱💚😉! Who loves cookies?! 🙋🏻I was organizing my pantry the other night (I know, party animal right?) and I found my container of @tryabouttime vegan brownie mix. I wasn't really in the mood for brownies, so I decided to turn them into cookies instead 🍪

INGREDIENTS:
▪1 cup @tryabouttime vegan brownie mix
▪1/2 cup canned pumpkin
.
INSTRUCTIONS:
1⃣preheat the oven to 350 and spray a cookie sheet
2⃣mix together the brownie mix and pumpkin. Scoop and roll into 12 balls and place on the cookie sheet
3⃣flatten each cookie with your palm until about 1/2" thick
4⃣bake for 8-10 minutes
.
These cookies are so quick and easy to whip up whenever a chocolate craving hits 🍫 plus they're vegan, which means they're healthy right? 😏

Fall is my favorite time of the year because fuzy socks, blankets and bein' cozy is the best. (It also doesn't hurt that my birthday is in October, then comes Thanksgiving and then CHRISTMAS!) .

Basically I get excited about things like a 12 year old on Christmas morning. I truly believe that you create your own happiness so I choose to wake up happy + with a grateful heart every single day. I didn’t use to believe that or feel that way. In fact, I use to struggle with crippling anxiety and felt the exact opposite. I use to just run around waiting for things to make me happy and fill me with joy.. which I later found is the quickest and easiest way to end up feeling blah and unfulfilled
.

Our experience on this earth is determined by how we choose to perceive our reality. What you choose to focus on becomes your reality. That might be hard to understand, it was for me too at first. But if you choose to focus on the positive and what brings you joy then GUESS WHAT! You are going to be filled with as much joy as a little elf on Christmas Eve! .

OH and if you haven't guessed, I like lifting heavy things and building muscle with PLANTS 🍃💪🏻

A big green smoothie was on the menu for lunch today. Had to include those figs at the end! 🌱 Ingredients: coconut milk, frozen banana, spinach, milled flax seed, and an orange all blended together, topped with strawberries and figs. 🤗

My love for Date balls runs deep!! They are probably my all time favorite snack...and I snack a lot!! I've made the chocolate mint balls too many times to count and was craving something different...hence these Cinnamon Roll balls. Someone please come pick some up before I eat them all!! Process the following ingredients, roll into balls and store in the refrigerator. 
10-15 dates
1 c almonds 
1/4 c shredded coconut
1 1/2 tsp cinnamon 
1 T coconut oil 
1 T water
2 T coconut flour
My love for Date balls runs deep!! They are probably my all time favorite snack...and I snack a lot!! I've made the chocolate mint balls too many times to count and was craving something different...hence these Cinnamon Roll balls. Someone please come pick some up before I eat them all!! I was asked AGAIN why I felt the need to post pictures of my  #plantbased meals. I do it for many reasons. The main reason is to keep me motivated to keep eating healthy, something I have not been doing for a very long time!!… but also to give me ideas on what to make for dinner, to inspire others to give plant based eating a try etc.
It's ok if it's not for you. We are all different and like different things. I don't judge. I definitely would not tell someone their meals that they worked hard to make looked “gross” or “unappealing”. Some people like to post about the products they sell or recipes they want to try or pictures of their pets or kids or politics or religion… whatever it's your page post what you like! If I don't want to see it I can just click “unfollow” in fact I do exactly that when people post pics of the dead animal they just hunted…. It's not my thing and I don't want to see it. Yes I feel very passionate about not eating animals, I even remember clinging to my dad's ankles as a kid trying to stop him from putting the lobster in the pot BUT I don't chirp anyone about it! You eat and post what you want and I will do the same. Peace and love.
