Undeniably one of THE best stir-frys I've ever made😍 Thank you @traderjoes for your precut stir-fry vegetables because it cut my cooking time in half! And the vegetables in it were delicious😋 I also added my maple-sriracha tofu for a little kick! And who would've thought that topping a stir-fry with fresh mango would be this good. It was such a good sweet touch to the savory veggies🙌 (Where's the mango emoji when you need it)?! Anywho, I'm going to chow down on this. Have a wonderful night everyone🌱 #whatveganseat
We are having a bit of fall weather here today - a little rain, and cooler temps, so I made this wonderful soup/stew. It’s easy to make, vegan, chock full of vegetables and it is delicious! I’m feeling all warm and cozy!
I found the recipe on the @forksoverknives website and it was contributed by @straightupfood. Recipe below.
What is your go to “cool weather” meal?
CURRIED FRENCH LENTILS
Serves 4 (makes about 8 cups or 4 bowls)
Preparation Time: 20 minutes Cook Time: 45 minutes
6 cups water
1 cup French Green lentils
1 yellow onion, chopped
1 small yam or sweet potato, diced (about two cups)
2 cups small cauliflower florets 2 ribs celery, sliced
1 can (14.5-ounce) diced, salt-free tomatoes
2 teaspoons curry powder
2 teaspoons dried green herbs (like a French or Italian blend)
1 teaspoon granulated onion 1 teaspoon granulated garlic
4 cups greens cut into bite-size pieces (like kale, chard, spinach, collards, beet greens)
1. In a soup pot on high, bring the water and lentils to a boil. Reduce heat to medium and cook for 20 minutes (a low boil).
2. Add the onion, yam/sweet potato, cauliflower, celery, tomatoes (including juice), and the four herbs and spices. Cook for 10 minutes at the same heat. Add greens, and cook for 5-10 more minutes (spinach, chard and beet greens won't take as long to cook as kale or collard greens), until potatoes and greens are tender. Serve as is or over cooked brown rice.
Did you know that every 7 years every cell in your body will have fully regenerated? Which means that in a bit over two years my entire body will be fully built by plants!! How amazing is that 🙃#youarewhatyoueat 🌱After 4 and a half years of eating a plant based diet I'm still amazed at all the benefits I'm still experiencing, and it only seems to be getting better! 🌈 from amazing digestion, to sustained daily energy, no more chronic pain, feeling stronger, fitter, having a clearer mind, staying effortlessly lean, saving money, living in line with my values, not harming the environment and getting to eat as much as food as I want every single meal 🍉🍌🍒🍍 My old self is still stunned because at the time of changing my diet I literally thought I might die from only eating plants and gave it a week... if only I had known!! 😂💭 ~~~
This beautiful salad bowl is what my meals looks like most days and has quinoa, red kidney beans, avocado, tomato, cucumber, olives, sauerkraut and lentil dip on a bed of greens and alfalfa sprouts 🌿🌿 #wholefoodplantbased#wfpb#thekinddiet
Tex-mex bowls: basmati rice, lime ginger chilli guac with cherry tomatoes, red peppers black eyed beans and corn from the cob roasted with smoked garlic, cumin, cayenne pepper, smoked paprika and olive oil, topped with corn tortilla crisps 🌶

Even when I'm sick I still crave meals like this. Sweet potato always hits the spot no matter the situation 😌 I had one of those with chickpeas, raw sugar snap peas, tomatoes, cucumber, and mashed avocado. This is probably my favorite meal at the moment!
I've spent today resting. My body just does not want to do anything! It's so tired and worn down, so I'm trying to listen to it. If I'm being honest, resting is so hard for me, but I know it's what's best in order to recover fully! So I'm drinking some tea and taking a break from stressful activities for the day 😊
•Based on the China study and 700 other studies, the more Animal-protein you eat (including milk, cheese, yogurt, chicken, beef, fish) the higher your risk of virtually all western diseases including cancer, diabetes, allergies, and auto immune disease
•Forks over Knives & What the Health are two of the many documentaries on Netflix explaining the science and research of animal-proteins, cancer and all diseases. Highly recommend watching
•For myself, since switching to plant-based proteins...I no longer have 'hereditary' high cholesterol or the serious stomach issues I used to have🙏🏼
Day 27🌿 #100daysofplants#tbt to the strawberries from our wedding weekend in the champagne region of France! Who knew our chateau was going to be a block away from the local strawberry festival?!
Everything was pure magic that weekend... including these 🍓
P.s. I highly recommend destination weddings 😘
When you're hangry and you just dump everything into a big ass plate. 🥗 I found out hearts of palm have 1g protein per 10 cals. 🙌🏽 That, along with the spinach and hemp seeds gave a decent amount of protein for being a quick salad.
Farmers market haul!💚
A sampling of the goodness we came home with: Green and black kale, mint, beetroot, carrots, cauliflowers, tomatoes, lemons, watermelon, cantaloupes, strawberries, grapes, and oranges.
When you're cleaning out the mini-fridge before checkout of the hotel and you don't want to waste any food...especially the hummus and pepper jack spread. 😲 So you use the last of the popcorn and a fork to get your snack on! 🌱😍✌🌱
Roasted Red Pepper and Pepper Jack Popcorn anyone? No wonder I gained 5lbs over the last 2 weeks. Thanks Irma! 🌴😎🌴
Where my homeschool mamas at?? 🙋We often have a little snack while we do school because we wait until the baby is napping in the afternoon. This week our @brinware mats are doing double duty and we're using them for @playdoh lol.
If you homeschool, I'd love to connect with you on my other account @watch.us.learn .
Snack is cucumbers, grapes, and Asian pears.
A close up of our delicious "Cashew Vegan Cheese" Kale Chips by @happytummiesbrisbane - what a beautiful shot. Have you tried this flavour of our Kale Chips yet? They are so delightfully crispy, and so "cheesy" you'll forget they're completely vegan! The link to purchase is in our bio. Hope everybody has a fantastic Friday ahead, one more day until the weekend! You've got this! 🌱💚
✨Raw vegan lunch✨
Rice paper veggie rolls (cucumber, avocado, carrot, yellow bell pepper, tomato, spinach) with creamy thai style peanut sauce + watermelon 🍉
Decided to follow the "raw till 4:00" rule today and so far so good 👍🏻
For the peanut sauce
-1 heaping tsp of peanut butter
-Juice of 1/2 lime
-1/2-1 tsp of low sodium soy sauce
-About 1 tbsp of water (+/- depending on desired consistency)
-Red pepper chili flakes
HELLO! We are one day closer to the weekend (yaaaaaaas) - throwback to this beautiful pasta dish with chickpeas, sun dried tomato & AVO 🥑. What's your favorite item(s) to add to pasta??? I love broccoli. That's probably my top item to add! As well as nutritional yeast but that's a given! Hope your day is going well ❤️
Food can heal. It can. And, you don't need health insurance or a doctor's prescription to access it.
This salad is absolutely health in a bowl. And it tastes great, too.
The players are, from the top, clockwise: avocado, quinoa, roasted root vegetables (sweet potatoes, purple yams, rutabaga), hemp seeds, edemame, roasted tofu, sunflower seeds, broccoli, pumpkin seeds, adzuki beans w/miso, and dried goji berries in the center. Sesame seeds and nigella sprinkled on top.
The dressing is a quick blend of 1T sesame oil (optional), 1/2 c water, 1/4 c tahini, 1/4 tsp grated ginger, 1T liquid aminos (or soy sauce/tamari), 2T lemon juice, and one pitted prune (for some natural sweetness)
Before I toss all of this goodness together, I save out a couple of items because my kids are still in that phase where they don't like their food all mixed up. These vegetables pair nicely with their meal of mac & cheese. Or a cheese quesadilla. Also, a grilled cheese sandwich. You get the point.
Our market haul today. It's so windy in our neck of the woods that we didn't get to stay and play much. At least we come home with good food! .
Pears, melon, Asian pears, cherry tomatoes, bell peppers, peaches, grapes, and Brussels sprouts. We also bought hummus, and while we were there we had coffee and pastry for breakfast. ✌️
Been on a lentil kick lately. Been on a too busy to function kick lately. Positive correlation of busy hours and lentil consumption is real📈
🌪Brown rice with a tomato lentil sauce. Cook down veggies of choice, add cooked lentils, tomato sauce and spices (garlic, oregano, basil, salt) and voila 🤙

"In 1985, Karen and I began selling dehydrated tomatoes from our farm, and called our company ‘Just Tomatoes.’ Over the years, we added apples and persimmons, then berries, corn, and peas. As farmers, we knew all about growing things—crops as well as relationships—so we built partnerships with other farmers to help grow our company. With new dehydrated and freeze-dried fruits and veggies in the line up, Just Tomatoes became much more than ‘just tomatoes.’ As a tribute to the nurturing spirit of my wife, in 2016, we’ve renamed the company Karen’s Naturals." – Bill Cox
Enjoying a Fantastic time in Oslo yesterday completing the filming of my new Portrait Documentary "The Naked Truth" - with producer chief camera man Rolf Orjan Hogset! You sure are great, Rolf - Thank You, Mr Awesome!!!! L💋🌹🦋🌈💝
I've always loved baked goods however, since adopting a more wholesome way of eating I must admit I don't enjoy them as much (at least the unhealthy ones). Today was no exception, I was craving a chocolate chip bagel but instead opted for a yummy and healthy avocado toast sprinkled with everything but the bagel seasoning, cashew cheese (from @minimalistbaker ) toast, and some fruit (grapes, peaches and strawberries--not all pictured). Don't get me wrong, I'm not perfect I do indulge once in a while, and I still have a bit of a sweet tooth, but I find it much more satisfying when I indulge in healthier options like fruit or a wholesome baked good. Your taste buds really do change and what once you thought was "tasty" you find is excessively sweet or salty and no longer enjoy to the same degree. On those few occasions when I find myself in a position to taste something I'm no longer used to, not only do my taste buds not like it but I can actually feel its effect in other ways. Give healthy a try, you won't regret it. It's not easy to change habits and you may have set backs but you can do it 💪🏼😊!! This was a much more satisfying breakfast than any bagel I could've had. The cherry on top is that if you have little ones to feed they'll happily crave and request healthy things too. Their little bodies can also feel the difference between a healthy and a not so healthy meal option. You'll feel awesome knowing you're laying the foundation for healthy eating habits that'll stay with them forever 👌🏼. My little one never tires of oatmeal so I made her some with almond milk, golden raisins, blueberries, strawberries, & peaches (no sugar needed). Keep eating that rainbow my friends 🌈🌱💚😉! Who loves cookies?! 🙋🏻I was organizing my pantry the other night (I know, party animal right?) and I found my container of @tryabouttime vegan brownie mix. I wasn't really in the mood for brownies, so I decided to turn them into cookies instead 🍪
▪1 cup @tryabouttime vegan brownie mix
▪1/2 cup canned pumpkin
1⃣preheat the oven to 350 and spray a cookie sheet
2⃣mix together the brownie mix and pumpkin. Scoop and roll into 12 balls and place on the cookie sheet
3⃣flatten each cookie with your palm until about 1/2" thick
4⃣bake for 8-10 minutes
These cookies are so quick and easy to whip up whenever a chocolate craving hits 🍫 plus they're vegan, which means they're healthy right? 😏

Hi I’m Chloe 🤗😏😎
Just an ordinary girl from San Antonio, Texas who loves her Spurs, bean & cheese tacos + Jesus. My hobbies include blanket fort building, singing songs from Frozen and adventuring with my wolf pup, Howler. I went to UT Dallas where I was on the dance team and graduated with a degree in Neuroscience. #whoosh ! Traveling is my favorite. Especially to Italy where my Nonna use to make me the best dang pasta in the world. Before coaching changed my life I was a neurophysiologist in the OR and dabbled in telecom.
Fall is my favorite time of the year because fuzy socks, blankets and bein' cozy is the best. (It also doesn't hurt that my birthday is in October, then comes Thanksgiving and then CHRISTMAS!) .
Basically I get excited about things like a 12 year old on Christmas morning. I truly believe that you create your own happiness so I choose to wake up happy + with a grateful heart every single day. I didn’t use to believe that or feel that way. In fact, I use to struggle with crippling anxiety and felt the exact opposite. I use to just run around waiting for things to make me happy and fill me with joy.. which I later found is the quickest and easiest way to end up feeling blah and unfulfilled
Our experience on this earth is determined by how we choose to perceive our reality. What you choose to focus on becomes your reality. That might be hard to understand, it was for me too at first. But if you choose to focus on the positive and what brings you joy then GUESS WHAT! You are going to be filled with as much joy as a little elf on Christmas Eve! .
That's me in a nut shell ^ .

What's your pick? 1, 2, or 3? I'm trying out food styling options with these Black Sesame Beetroot Blackberry Coconut #chiapudding parfaits. I read an article recently that said images should be less perfect/staged, and more spontaneous/realistic, but I really don't think so. What do you think? .
🎉 Again, thank you all for your messages about my THIS / NOT THIS shopping choice snaps yesterday. I would love for you look around and share your #plasticfree food item options with me via your stories, please geotag where you live so I can share them in mine 💕 Thank you!

A #yummy little find today! Vegan, soy-free, low-carb, super crunchy. 3g fiber, 4g protein --> loaded it up with some fresh guac. Perfect little snack. Or lunch. Whatever! 😋#snacktime#traderjoes#lowcarbvegan
I was asked AGAIN why I felt the need to post pictures of my #plantbased meals. I do it for many reasons. The main reason is to keep me motivated to keep eating healthy, something I have not been doing for a very long time!!… but also to give me ideas on what to make for dinner, to inspire others to give plant based eating a try etc.
It's ok if it's not for you. We are all different and like different things. I don't judge. I definitely would not tell someone their meals that they worked hard to make looked “gross” or “unappealing”. Some people like to post about the products they sell or recipes they want to try or pictures of their pets or kids or politics or religion… whatever it's your page post what you like! If I don't want to see it I can just click “unfollow” in fact I do exactly that when people post pics of the dead animal they just hunted…. It's not my thing and I don't want to see it. Yes I feel very passionate about not eating animals, I even remember clinging to my dad's ankles as a kid trying to stop him from putting the lobster in the pot BUT I don't chirp anyone about it! You eat and post what you want and I will do the same. Peace and love.

This combination of toppings is my absolute favourite and I get it every time because it's so good, if you haven't tried avocado on pizza you are missing out ✌🏽
