A Los Angeles legend, Bill's Burgers has existed virtually unchanged on Oxnard Street in an industrial section of Van Nuys (or Sherman Oaks, the boundaries are matter of ongoing contention) for a half-century. The cast-iron grill dates back to the 1920s and the owner Bill Ewell, who bought the 10-by-20 stand for $2,500 in 1965, stills cooks the burgers, despite now being in his ninth decade. It's cash only, in the fact register can't ring up anything higher than $5.99.
Elwell is a loveably cantankerous character. His staff is primarily made up of his ex-wives (he has five) and former girlfriends. He's been known to razz customers who complain the burgers aren't cooked enough or take issue with the quantity of mayo. And he proudly displays a sign that reads, "This is not Burger King. You don't get it your way, you take it my way or you don't get the damn thing." The charms and idiosyncrasies of Bill's Burgers are many but it's the hamburger itself that has kept legions of regulars coming back decade after decade. It's nothing fancy it's simply a classic American roadside burger, perfectly made.

Catching the end of the Larkspurs at The Quarry and looking back over the crowd. We originally came to grab fries (which everyone was raving over) while catching the show and waiting for Jerusafunk to come on nextdoor at St. Elmo's. Unfortunately the flashing lights at Old Bisbee Brewing Company had finally gotten to me after watching some sets over there, and by the time I was okay to eat and rock the Larkspurs were on their last two songs. :( We did get a great recommendation for their mac and cheese and another for their burger, so we came back for both the next day while also catching Ramses II. Sandy (pictured here behind the bar) was amazing and helped us with some issues we had at the end of the night. (Nothing to do with the food though! That was better than perfect.) Between the great music they often have and the amazing food and service, The Quarry seems like it will be a regular place for us going forward. (Especially helpful it is across the street from work! Mac and cheese lunches, anyone? I won't eat it near the art. 😁) In fact if we are here for my 35th birthday then maybe.... Hmm.... :) Thanks again for your hospitality, The Quarry staff! (Hope you didn't have any more issues with flies in your ice cubes! 😅) NOTE: The Quarry specializes in slow food and comfort food. This is not a place to go if you need a quick meal. This is food worthy of the wait and worth every moment you stay to slowly savor it once it is in your mouth. Ah, I wish i didn't finish my leftovers already. I better sell more art on Tuesday so I can get more hamburgers today. این غذا یک غذای سنتی هست مهم ترین بخش آن آماده سازی سبزی هست که کنار مرغ قرار میگیره. *سبزی کنار مرغ ترکیبی از: زولنگ.انارریژه.سرسم.اوجی.نعنا.ریحان.مرزه.ترخان.(از هر کدام ۲دسته)
گشنیز.شوید.شنبلیله.(از هر کدام ۵دسته)
تره.جعفری.(از هر کدام ۱۰دسته)
برگ سیر سبز(از هر کدام ۷دسته)
همه خرد کرده و همراه با پیاز فراوان تفت می دهیم.
سپس به آن مغز گردو نیم کوب شده، نمک،فلفل،زردچوبه و زیره همراه با رب انار اضافه می کنیم. ***بعضی ها به آن رب کندس یا آلو یا زرشک یا تخم انار اضافه می کنن.
مرغ سرخ کرده و کنار می گذاریم.
سپس کمی پیاز رنده و تفت می دهیم به آن ادویه جات و کمی رب گوجه اضافه می کنیم.
مرغ داخل سس گذاشته و کمی آب اضافه می کنیم تا مرغ بپزد.
۱۵ دقیقه مانده به پخت کامل سبزی مخصوص اضافه و می گذاریم با هم مچ شوند.
