Every week I find a few minutes to prepare and cook a chicken, spaghetti squash and a starchy squash or sweet potatoes so I have #protein and #healthycarbs any time I need it. ๐Ÿ—๐Ÿ ๐Ÿ‘Œ Squash is drizzled with EVOO, sea salt and pepper and cooked cut side down at 375 for about 30 minutes. If you still don't know what to do with your #delicatasquash, put some ghee in a pan, add the cooked squash rings, and #putaneggonit. (Check my story for what's in it) ๐Ÿ‘† In the "old days" I would have been beyond hangry by now...I used to get foggy and dizzy and have to sit down in fitting rooms to eat a granola bar because my blood sugar was so out of whack. It's amazing how now, fueled by a protein rich breakfast, I can last until 4pm without a second thought. Able to clearly focus on everything I need and have a productive day. All because I got off sugar and processed carbs. Who woulda thought... ๐Ÿค” .

Dinner tonight was #paleo ginger chicken and broccoli from @againstallgrain. I was in a time crunch to get to work and was able to prep and cook the entire meal in 45 minutes! Glad I took this photo while cooking because the family loved it and didn't save me any. ๐Ÿ˜ญI added bok choy along with the broccoli and it was a hit. When the chicken was done I took it out of the pan and added a bag of @greengiant #cauliflowerrice to cook in the sauce and it's sooooo good!!
