Every week I find a few minutes to prepare and cook a chicken, spaghetti squash and a starchy squash or sweet potatoes so I have #protein and #healthycarbs any time I need it. 🍗🍠👌 Squash is drizzled with EVOO, sea salt and pepper and cooked cut side down at 375 for about 30 minutes. After a full day of shopping it just occurred to me that I haven't eaten anything since this organic bok choy and beef messy omelet I made at around 11:00am. (Check my story for what's in it) 👆 In the "old days" I would have been beyond hangry by now...I used to get foggy and dizzy and have to sit down in fitting rooms to eat a granola bar because my blood sugar was so out of whack. It's amazing how now, fueled by a protein rich breakfast, I can last until 4pm without a second thought. Able to clearly focus on everything I need and have a productive day. All because I got off sugar and processed carbs. Who woulda thought... 🤔 .

Meal prep! 🥘 Following a paleo diet means I don't eat beans. For some people eating legumes can lead to inflammation, particularly those with autoimmune disease. But, when my son asked me to make him chili, I remembered that my kids LIKE beans and they CAN be a part of a healthy and nutritious diet, and I haven't made them in a really long time. In fact, 1/2 cup of cooked beans per day are allowed during the #21dsd if you're following level one! So...this 3-bean chili with grass fed beef and organic local veggies is in the slow cooker. I never really made fried fish 🐟 before, but it came out great, even the next day. Grey sole dipped in egg and @bobsredmill #paleoflour , pan fried in organic palm oil, served with a little leftover grass fed beef, roasted shishito peppers 🌶 and lots and lots of local organic broccoli rabe from @ironwoodfarmny. 🔹1.5-2 lbs beef marrow bones (mine are grass fed local bones from @hemlockhillfarmny). 🔹1 onion
🔹5 cloves garlic
🔹6 peppercorns 🔹2 TBSP Apple cider vinegar 🔹two bay leaves 🔹carrots (optional- I don't always use them but did today)
🔹Add water to fill line on slow cooker, cover and cook on low 16-24 hours or more. 🔹Strain and serve or store in refrigerator or freezer. .

Kicked off the summer with our annual post-camp drop off dinner at @stgeorgebistro in #hastingsonhudson . Dinner tonight includes some things I've missed the most during my #21DSD . Pickled golden beets and red peppers - both made locally with a little sugar added - no good for detox but perfect for this #postdetox meal!
