I love to keep it simple and tasty. Here is my healthy #chilerelleno recipe with #calabacitas instead of #jasminerice
For calabazas you will add oil to pan and sauté 1/2 an onion for about 1 minute. You will then add 1 can of corn (drained) and 2 chopped calabazas. Add low sodium chicken knorrs (be generous) put on medium heat and cover for about 5 minutes. You will then add your Chile rellenos and set on low and cover for 5 minutes.
Dinner is made in less than 30 minutes.

Jingle, jingle, Christmas is not far away, I have most of my shopping done and was even able to attend a performance of Handel’s Messiah last week which was absolutely lovely. Whenever I go to a Vietnamese restaurant, I tend to always order the same thing: stir-fried vegetables with tofu over rice. I love how simple it is, and yet it was still super-duper amazing. I totally cleaned my plate 😋
