Putting ice on alcohol is too mainstream. Believe it or not, in Kagoshima, we drink, warm alcohol! Ladies and gentlemen, the Shochu, licquor made from sweet potato, dilluted in warm water. Only in Kagoshima.
『麺劇場玄瑛』福岡內唯一獲得米芝蓮 Bib Gourmand 拉麵. 淡麗豚骨系... 不過肯定不只是福岡內最好吃的拉麵. 淨係同區的 Big Heavy Kitchen 大重食堂 已經更加出眾. Gen Ei Tonkotsu Ramen 玄瑛流とんこつラーメン ¥750 coupled with the amphitheater seating & theatrical ramen making display.. Kyushu overall from Fukuoka to Kurume is known as the Pork Tonkotsu Ramen Capital of Japan. However historically the murky White Broth with lots of boiled down miscellaneous Pork & Chicken, Horse, Beef bones & calcium bits #白濁スープ cannot be taken for granted, since it initially began as a more transparent soup . Nowadays, the semi-transparent or clearer soups similar to 半透明なスープ seems to be artisanal trendy again, probably because Tokyo is geared towards everyday edible, subtle yet sophisticated soups #淡麗系 direction.. and don’t forget this Michelin Bib Gourmand rated Mengekijo Gen Ei ( #麺劇場玄瑛 ) also has shops in Tokyo Roppongi & elsewhere.
Taste wise this was more on the mild side for a Pork Bone, with some Seafood, Garlic, Onion & Sesame Oil taste but not as complex in layering or with pronounced character as I had imagined - it’s almost too Safe. But then again it’s only HKD $52 for a Bib Gourmand experience.. Noodles are made in house and more of the Alkaline, curvy noodles 縮れ麺, someone even mentioned they resembled Hong Kong Wonton noodles. For me personally for a similar style of clearer Ramen, nearby Big Heavy Kitchen ( #HKEBigHeavyKitchen#大重食堂 ) is seriously on another level in sophistication.. 🤔
