If you guys haven’t tried this you are not living! I got the inspiration from @lowcarbwithjennifer although I didn’t follow her recipe exactly it’s pretty similar (I didn’t have Monterey Jack cheese so I had to substitute with mozzarella) I also added tomatoes because i saw another recipe that was similar and they used tomatoes, I had some extra tomatoes in my fridge that we’re going to go bad so what the heck 🤷♀️ this is a side dish that is going to make my list forever and will be included on holidays! I was in awe the entire time, I’ve never thought to make something like this! It's Fall Y'all...so let's talk CHANGE! 🍂🍁🍂Over the last 10 weeks I've trialed & errored my entire life around Keto. It's a daily challenge & one things for sure...IT WORKS. Do we all do the same things? No. Is that okay? Yes. I've learned you have to do what's best for YOU. You find things that work...that makes you happy...that excites you! Do we make the wrong choices some days? Yes...but the best thing about those choices is tomorrow's a new day to make better ones! A few things that I have found that is crucial for me on Keto: 🔹️Variety! I have to have a variety of foods that excite me & make me happy. I'm not one to eat the same thing every day.🔹️Water! It helps with everything! 🔹️Daily Weighing! I know everyone has their own opinions on this one, however for me it's all about daily accountability. I use my weight every morning to plan my Keto day. From fasting to how light or heavy my meals are to exercising at certain times of the day, that morning number tells me everything I need to know. 🔹️Sleep! I'm so hardheaded about this but I honestly believe it really does play a part in weight loss. The more sleep, the better prepared you are to slayyyyyy your day! 😪🔹️Fasting! Yes, I do it and I loveeeee it! My normal day is a 16:8 fast with at least one 24 per week. Best thing about Keto is I'm usually not even hungry while I'm fasting (& the water helps with this too). & last but definitely not least, 🔹️Macros! I have soooooo many people message me about my macros...what are they...do I track them...why this...why that. I track my macros every day. 70% Fat 25% Protein and 5% Carbs. I do it because for me, it's accountability. I like to see it. Physically see it every day. Do I have time to do it? No...but I make the time because for me, it's what I need to succeed. Do I go over my macros some days? Yes. & guess what? I'm okay with that because I know the next day I'll do better. I hope this gives you a little insight on my Keto Journey. Getting back into the grove and it feels so good! I leave for vacation in 9 days so here is to day 1 of 9. I plan to work out HARD for the next 9 days! I’m feeling amazing right now and it’s all thanks to this amazing machine. I just tuned out life for 45 min and did this for me!! I’m worth it, my kids are worth it, my husband is worth it! I’m doing this ultimately because I want it for me but making sure I’m around to enjoy life with my two beautiful angels and my awesome husband is a necessity! I deserve 1 hour a day to work towards a better me. I’m a stay at home mom so my two little ones are running wild while I workout, but they know it’s my time and are quite well behaved in the meantime. Today I did a 10 min warmup/stretch with 40 squats 20 jumping jacks 30 seconds of high knees followed by another 20 jumping jacks. After that, I stretched a little more then I did the treadmill for 45 min followed by a few more stretches for a cool down. It was hard. Really hard. Yesterday I had a cheat meal that turned into a cheat night 😭 and woke up swollen, bloated and up 2 lbs. I don’t know why I do what I do but today’s a new day and I’m not going to dwell on the craziness from last night. Today is going to be a good day! I’m already on bottle number 5 of my water intake and I just finished my post workout meal! Now time to clean up and get these babies down for a nap! This is hard for me to post, harder than it should be. I’m so far from where I want to be but... I want to hold myself accountable. I want to be able to look back at pictures of myself and see progress. I follow so many amazing people who are on a journey to find happiness within themselves and they inspire me not daily but hourly. When I don’t feel like getting my workout in, I just get on instagram and these people who I’ve never met or even spoke to inspire me to get up and do it! This is me guys! Today is 09/29/17 and these are pictures of me that I just took about a hour ago. Tuesday 09/26/17 I weighed 257lbs, tomorrow I weigh in to see what progress I’ve made and can’t wait to find out. These are raw and real and I become emotional when I look at them. Who needs crackers and cheese when you can have pepperoni and cheese and lose weight while eating it!? Hi guys! This is today's lunch. It's easy and quick and completely effortless while being so yummy!! I'm completely obsessed with this @thelaughingcowusa cheese and about died when I decided to go back to low carb/Keto and discovered that I still had some in my fridge, I decided to put my thinking cap on! Lol jk I have done this before with this cheese only difference I made this time was I put my pepperoni into the microwave on a paper towel making pepperoni chips (cooking only 6 at a time to ensure the crispness and to make sure I didn't under cook or over cook any of them) after I made the desired amount (I made 32 slices which is two servings 1 carb per serving) and I spread my cheese right on top like if you were to do with a cracker! Guyyyyssss! This is so good!!!! Dinner tonight is "Chicken, Bacon, Broccoli Bake" 🙌🙌🙌 Shredded chicken(1 boneless skinless breast) 2 piece of bacon, a cup of broccoli cooked in butter, one tablespoon of sour cream (mixed into the shredded chicken before putting everything together ) and a 1/2 cup of mild shredded cheddar cheese
Once everything is done cooking (chicken boiled, broccoli cooked in butter, and bacon cooked it's time to put into a baking dish. First mix your shredded chicken with sour cream, then put down into your pan, add crumbled bacon and cheese then add your broccoli and more cheese and pop it back into the oven on 400 for about 10 min! Sausage egg and cheese and bacon egg and cheese for breakfast! Honestly this is wayyy too much food Lol but it was really good. I ended up only eating one egg on each and just the yolk from one of the other eggs. Honest to god this reminded me as if I were eating McDonald's only difference is it had no bread lol but as I sat here and ate it there was not one time where I had wished it had bread. I love how I can eat what I love and not feel like a uncomfortable blob that just wants to go back to bed. I'm still questioning myself why I do what I do and why I ever stopped eating low carb/Keto? I need to quit sabotaging myself and stick to what works for me! Today is going to be a fun day, we are going to the @iheartradio concert tonight here in @lasvegas at the @tmobilearena! Today I plan to stay on track and only eat low carb! No excuses just because it's Saturday or because it's date night, I have goals! Time to clean my kitchen and get my day started!
