Decided to start an egg fast today for no other reason than - I have a butt load of eggs in my fridge for some reason.  Hubs loves eggs so he never complains when I offer an egg fast. So the totals for today are 5 eggs and 6 tbsp fats 2 oz. cheese and 9 glasses of water. KETO CHOCOLATE CHIP SCONES

These were supposed to be Keto chocolate chip cookies 🍪 adapted from a pancake batter recipe... but I went rogue and didn’t bother reading any recipe instructions. Haha

Instead of cookies, I got scones. And they were actually quite delicious 😊
.
Ingredients
* 1/2 cup almond flour
* 2 tbsp coconut flour
* 1 scoopVanilla UMP protein powder
* 2 tbsp Libby’s chocolate chips
* 1/4 tsp baking powder
* 1/4 tsp sea salt
* 1/4 tsp Cinnamon * 1 whole egg
* 3 tbsp brain octane oil (or MCT oil or coconut oil)
* 2 tbsp kerrygold butter

Instructions
1. Preheat oven to 325 degrees.
2. Mix all the dry ingredients together in a bowl.
3. Whisk all the wet ingredients in a bowl.
4. Mix the dry ingredients into the wet ingredients.
5. Form 6-8 well balls (or tiny triangles).
6. Bake at 325 degrees for 17-20 minutes.
7. Take them off the pan and set on a wire rack to cool. Or just put them on a plate and start eating them immediately like Chris and I did. 🍴

I held a two minute elbow plank today!!!! One of my best friends who is running spartan with me has a goal of being able to do a three minute plank and a pull up by the end of the year. I’ve joined her in this goal so I tried three times to see how long I could hold a plank. First try 1:23, second try 1:40, third 2:00! Feeling pretty awesome about that since I haven’t ever held one more than a minute before today. I love new goals to work towards and friends who also have similar fitness interests! Thanks for motivating me Jenny 😘

I made it a little different than recipes I found. I cooked 20oz of chicken breast in a crockpot with 1c chicken stock on high for 3 hrs. I then took about half and put it on the stove and melted 4oz creamcheese, added about 1/4c colby jack shreaded cheese, salt & pepper. Served with cooked bacon on top bc the crispier the better in my opinion 🥓 even that alone is making my tastebuds dance. Next time im going to try it with a cajun kick 💃🏼

If Keto Crack Chicken is wrong.. I don’t ever want to be right!!!!! I cannot even put into words how heavenly this is. WHYYYY DID IT TAKE ME 11 WEEKS TO TRY THIS ?!?! Ermagerd. . . I made it a little different than recipes I found. I cooked 20oz of chicken breast in a crockpot with 1c chicken stock on high for 3 hrs. I then took about half and put it on the stove and melted 4oz creamcheese, added about 1/4c colby jack shreaded cheese, salt & pepper. Served with cooked bacon on top bc the crispier the better in my opinion 🥓 even that alone is making my tastebuds dance. Welp, I finally tried it: cinnamon sugar pork rinds! What the fuck. It’s actually good 😦 Just melted a little butter, tossed it in it, then did the same with cinnamon and some swerve. Baked them for a few minutes to crisp them back up. So weird it works! .

- 1/2 cup erythritol (I used swerve granulated)
- 1 tsp baking powder
- 1/2 cup melted butter
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp beef gelatin (I only had collagen powder so that's what I used)

Combine dry/wet ingredients separately. Add in wet ingredients to dry. Add in chocolate chips. Bake at 350F for 15 minutes (or until golden brown) LET COOL COMPLETELY! Enjoy!! 🍪🍪🍪

There was a time not too long ago when the doctor's weren't sure I'd ever walk again. I had a sever back injury and my discs were crushing my spinal cord. The surgeon didn't know how I was even walking when I went into my appointment. So I went in for emergency surgery to save the use of my legs. 
You take your legs for granted until there is a possibility you wont be able to use them anymore! That was a few years ago, my surgery was a success but I'm had a long recovery with chronic pain, not being able to stand for long periods of time and a severe fear of falling. 
These days with me finally having weight loss success using ketones and the ketogenic lifestyle. Ketones and the keto diet have not only helped me lose 50 of the 160lbs I want (and need) to lose, but I have much less chronic pain! So now #walkingforweightloss is so much more enjoyable. I get to exercise, raise my heart rate, and clear my head. There is something about breathing in fresh air and being with your own thoughts that makes you feel better all around!

Don't take your body for granted. Feed it well (I recommend ketogenic diet and ketones) and move throughout the day. Besides walking, I LOVE to dance (usually in my kitchen LOL)! What is your favorite way of getting moving?

I’ve been making this alot during my fasts. Not sure if anyone else has created it yet but I love asian foods and this really helps me if I’m craving anything. Plus it’s delicious and easy. I don’t measure anything because I love spice so youll have to taste test and see what you like but the ingredients are; spicy kimchi, turmeric, ginger powder, garlic powder, himalayan sea salt, black pepper, cayenne, and chicken bone broth. Occasionally I add some kerrygold but I don’t feel like I need it today. Feeling pretty awesome and not lacking any energy. Heat it up for a few minutes and thats it. Be warned this is spicy so if you have issues with that don’t use cayenne.

I’ve been making this alot during my fasts. Not sure if anyone else has created it yet but I love asian foods and this really helps me if I’m craving anything. Plus it’s delicious and easy. I don’t measure anything because I love spice so youll have to taste test and see what you like but the ingredients are; spicy kimchi, turmeric, ginger powder, garlic powder, himalayan sea salt, black pepper, cayenne, and chicken bone broth. Occasionally I add some kerrygold but I don’t feel like I need it today. Feeling pretty awesome and not lacking any energy. Heat it up for a few minutes and thats it. Ok this feels silly to post because it’s not a drastic change on the outside BUT so much has changed since being in full keto mode. Not the weird lazy binge eating keto that I was ~trying~ to do. .

I feel like keto is great for weight loss but I think the mental benefits are right up there with that. My chronic depression is basically fully managed when I live this way. Along with therapy, this diet just helps me function. If you have chronic depression, guess what?? YOURE TIRED AF. No motivation or interests. Everything feels heavy. This way of living totally turns all that around for me. How was I supposed to be happy when I was always EXHAUSTED? Now I have energy and mental clarity to get out of the weighted down shlump that is depression. So, hopefully this is motivating. Not so much for my physical changes so far, but for the mental. I AM down 7lbs and that is awesome. But I feel like the cloud of shitty ass postpartum depression is lifted, and that is worth all the flippin bread in the world 🤣🌈

Here's a progress photo. I'm currently 27 pounds down, striving to hit that 30 pound mark! In a short 3 months, I can't believe these are the results! I've struggled a little and have had more cheat meals than i'd like to admit, but I really want to make this a lifestyle change and not just a weight loss fix. Every single time I cheat, I feel like shit afterwards. I'm not perfect and I'll likely make more mistakes again because I'm only human and pasta is delicious.😋😂 Thank you everyone for following my journey!!❤️
