OK, next up: #Vegan#Cookies !! So...getting real here...one not so fun thing about being #vegan , is missing Nutella. BUT...one of the MOST fun things about being vegan?? Replacing my favorite tastes in creative and FULFILLING ways!! Like these Chocolate Hazelnut Chip Cookies. So yummy!! So easy!! So quick and satisfying!! So I can, uhm, have my Hazelnuts, and eat them too. Ahem. Ok, too much corn? Let's cut the corn, and just enjoy the chocolate and hazelnuts. 😁
Chocolate Hazelnut Chip Cookies
Combine about 7 Tbsp vegan butter (little less than 1/2 cup) with 1/2 cup granulated sugar, 1/4 TSP #molasses , 2 TSP EnerG Egg Replacer powder, 1/2 TSP salt, 1/4/TSP baking soda, 1 TSP Vanilla and 1/4 TSP almond extract (optional). Mix well then blend in 2 Tbsp water. Stir in 1 cup flour, 1/2 cup hazelnut meal and 3/4 cup chocolate chips. Bake on parchment lined cookie sheet in a preheated 375 degrees F oven for 8 to 12 min (depending on how crispy you want them). I used convection setting. Enjoy!! Makes about 1 dozen
Happy Tuesday!! Wait, it's still Tuesday, right? 😁 I'd like to extend a warm welcome to my new Insta-fam & friends with a couple of my favorite recipes. First up: BBQ Jackfruit!! 📸 @marinakatura
2 cans Young Green Jackfruit, in brine (20 oz. each)
1 T dark brown (muscovado) sugar
1 t garlic powder
1 t onion powder
1 t smoked paprika powder
¼ t dry mustard powder (optional)
pinch cayenne pepper (or to taste)
vegetable oil for pan frying
1 cup BBQ sauce, plus more for serving
water to thin as necessary (up to ¼ cup)
1 t molasses (optional for rich color and deeper flavor)
1 t liquid mesquite smoke (optional)
Drain and rinse jackfruit. Cut off the center “core” portion of each piece of jackfruit. Squeeze with hands to remove excess water in jackfruit. Pat dry with paper towels and place in a large mixing bowl. Use hands or potato masher to smush and separate jackfruit in bowl. Add sugar and spices and toss to combine. Heat 1 or 2 tablespoons vegetable oil in a skillet on medium high heat. Add jackfruit, and toss to coat with oil. Cook, stir-fry style for 4 or 5 minutes, until jackfruit begin to brown. Stir in BBQ sauce. If sauce is too thick, thin with water as necessary or desired. Turn down heat, cover and cook for 25 minutes, stirring occasionally. Remove cover and increase heat. Add molasses and liquid smoke. Cook for an additional 5 minutes, stirring constantly. Remove from heat. Enjoy!!

Fall being around the corner means testing out new soup recipes 😋. Here's our Potato Leek Soup made with potatoes, leeks, cauliflower, veggie broth, almond milk, garlic, salt, and pepper. For toppings we used nutritional yeast, pumpkin seeds, and sourdough bread (toasted and chopped). You could also add scallions and/or hot sauce #vegan#oilfree

In honor of my 4 year veganniversary, I had lunch at my favorite restaurant @thekindsage. 🤤
Here's what the past 4 years have taught me:
There's not a one size fits all diet.
It's not necessary to be a "perfect" vegan, vegetarian, whatever.
And more-so than I'd recommend changing your diet, I'd say to do away with anything that doesn't serve your best self / highest vibe. Maybe eating meat or fish or dairy or whatever, does! You would know. But processed "food" probabbbllyyy does not, ever. And eating food only ever because it tastes good and not because it actually nourishes you is maybe something you'll want to revisit at some point. 🤷🏻♀️
What these years have given me is a platform to always choose up. A tangible way to dedicate myself to my own elevation. As a healer, it has been another tool for me to craft and protect my energy. And as a human I feel like all of my systems and processes have been made better. Like now I'm a real mf ninja. :)
Ultimately, though, nobody ever knows what your body needs better than you (hopefully). Learn & honor your unique needs.

A month ago today, I was headed to New York for my very first Woodstock Fruit Festival!! Melons for breakfast EVERY morning, fruits galore, smoothie stations, fresh orange and cane juice, salad bar every night with the best dressings from @therawadvantage and @missnaturallyashley 💗🙏 .
If all that sounds amazing, top it all off with the most incredibly loving, heart-centered people AND in a beautiful place, right on the lake 👌 heaven on earth ✨🌏🌼
It was a little bit scary going alone and I had a hard time adjusting the first two days because I experienced really intense flare ups (migraines, fatigue, skin breakouts), but I knew I would regret leaving. I stayed and it was the best decision I could have made. My life has changed because of this festival, and not only because I've found somewhere I belong, somewhere where I'm not so different, but because I also found a piece of myself while I was there; a piece that I didn't realize had been missing 💖🔎
Tried out @traderjoes Curry Simmer Sauce today! Very yummy, but definitely has a kick to it (but maybe that's just me because I cannot handle spicy food 😂). I made it with tofu, broccoli, chickpeas, and shredded carrots. Paired with steam jasmine rice. 🍚
What's your favorite fruits to add to your smoothie? I kinda just throw whatever I have in mine and usually they end up pretty good. Like this one w pineapple, banana, mixed forest berries, spinach, chia seed and unsweetened soy milk. 🍍🍌🍍🍌
