🍁HEALTHY SWEET POTATO SHEPHERD'S PIE RECIPE🍁
🛒1 pound of FitFodder.com Premium Irish Lamb Mince (or FitFodder Extra Lean Irish Grass Fed Beef Mince / FitFodder Lean Irish Pork Mince)
🛒2 pounds of sweet potatoes, cut into chunks
🛒2 tablespoons butter
🛒1 teaspoon salt
🛒1/2 teaspoon black pepper
🛒1 tablespoon olive oil
🛒1 medium yellow onion, chopped
🛒2 cups mushrooms, chopped
🛒3 cloves garlic, minced
🛒1 cup stock/broth
🛒1 1/2 cups chopped tomatoes
🛒1 teaspoon dried rosemary
🛒1 cup frozen peas, corn and carrots
🛒Grated Parmesan and fresh rosemary for garnish (optional)
👩🏼🍳In a pot of cold salted water, bring the sweet potatoes to a boil. Cook for about 20 minutes or until tender, then drain.
👩🏼🍳When cool enough to handle. remove and discard the skins.
👩🏼🍳In a large bowl, mash the sweet potatoes with butter, Parmesan cheese, and salt and pepper. Set aside.
👩🏼🍳Preheat your oven to 200c degrees. Lightly coat individual casserole pans (or one large pan) with butter.
👩🏼🍳In a large pan, cook the mince over medium-high heat, breaking it up with a spoon. Cook until no longer pink. Transfer the meat to a colander and drain well.
👩🏼🍳In the same pan, heat oil over medium-high heat. Add the onion and mushrooms and cook until tender (4-5 minutes). Add the garlic and cook for 2 more minutes. Stir in the stock, tomatoes + rosemary.
👩🏼🍳Bring to a boil, then reduce heat to medium and simmer until thickened. Then stir in the cooked meat, corn, peas and carrots. Add salt and pepper to taste. Cook 2 minutes.
👩🏼🍳Divide this mixture among the baking dishes or into dish. Spread the top with the mashed sweet potatoes.
👩🏼🍳Bake uncovered for 15-20 minutes or until the tops are lightly browned. Top with Parmesan cheese before serving. Enjoy!

On our quest to get more people eating grouse we have been out and about again supplying local pubs and restaurants, this time in the Grassington area of the Yorkshire Dales. First stop was Grassington House where I met with award winning John Rudden who has a passion for locally sourced and seasonal ingredients. He has promised me a 'grouse special' which I will share with you all tomorrow! Then we popped up the street to the Black Horse Hotel where I met Josh and Head chef Dave who were also keen to get this seasonal bird onto the menu.
Finally I visited the Gamekeeper Inn at Threshfield where I met head chef Ashley, although Ashley has cooked grouse before they have never had it on the menu here, as it was almost lunch time I decided to stop for a bite to eat myself, within a flash Ashley had put together this amazing Juniper, thyme and black pepper seared grouse breast with textures of carrot rich red wine jus. I offered the ladies on the next door table to try it.... check out their video review at the end.
