My friend, Annabel, dropped off some rhubarb from her garden for me. There was loads of it. So I took it round to my mum's house and made us each a rhubarb crisp. So delicious! My favourite is to eat leftover crisp for breakfast on cold mornings! :)
BLUEBERRY & LEMON LOAF 🍋 (recipe below) •
Blueberries are in abundance at the moment, so I decided to stock up and create a little sweet treat 😍 •
I gave a few slices to some tradies working on our house at the moment and they all loved it 🙌🏼 They were also both confused and amazed that they could eat something like this vegan 😂 Food is such an easy gateway for others to learn about Veganism 🙌🏼 Don't know how to bring up Veganism to the people around you? Make them something! 🙈♥️ •
You’ll need: 1 1/2 cups flour
1 tbsp baking powder
1 tsp salt
1 cup raw sugar
3/4 cups dairy-free milk
1/3 cup coconut oil
2 egg replacers
zest of two lemons
juice of 1 lemon
1/2 tsp vanilla essence
1 cup of blueberries, fresh or frozen
1. Preheat oven to 180 degrees celsius and line a loaf pan with baking paper
2. In a medium bowl, combine all wet ingredients together and whisk until well combined
3. Add in dry ingredients and mix well
4. Add blueberries and stir only a few times (to make sure they don’t bleed)
5. Pour batter into pan and bake for 55 minutes or until a toothpick comes out clean
6. Serve with extra blueberries, jam or some coconut cream
7. Enjoy friends!

Thank the powers that be for meal planning and simple but delicious food. Wake up after a 3+ hour day sleep thanks to head, back and neck pain, and pork fillet with mash gratin is super easy and quick to whip up. Another one from #5ingredients by @jamieoliver. And another one that is going on rotation.
Favourite salad at the moment.
Cucumber, herb, dried shrimp and peanut. Asian dressing. For the recipe ➡️➡️⬇️
3-4 small crunchy cucumbers,
2 handfuls mixed herbs, as in- dill, round mint, vietnamese mint, tiny parsley leaves.
2tbsp each raw peanuts and dried shrimp.
Chop cucumbers and place in bowl. Add washed herbs, I like to keep them whole. Toast shrimp and peanuts over a low heat in a small pan. Chop roughly, and add to bowl.
Make a dressing of 1tbsp each fish sauce, rice wine vinegar, mirin. Add a few drops of sesame oil to taste, and dress salad adding half of dressing to start, only adding more if necessary, pop the rest in the fridge.
I say this because you don't want to swamp the salad, and the size of cucumbers and handfuls of herbs will vary depending on where you live. This will serve 2 people. Have fun! 💚

Spinach & Pea Kedgeree 🐟Rainy Mondays may need Kedgeree for cosiness and sleep help (Higher levels of DHA from fish has been linked to better sleep👌🏻)⏰After my best efforts last night on the sleep front - see last post - was in bed 10.45. Woken up at 6 something. Think I got 7.5. So I'm setting my alarm for 10pm bedtime again tonight. Gotta crack this.
Anyone get more sleep than usual? Get to bed earlier? Given the unknowns of the night - small people could wake you at any moment - I think the only way is to get in bed early. I'll keep you posted on my sleep experiment!
