Pho broth in the making. I threw a bunch of pork bones in water, added oven roasted ginger, onion, kosher salt and a spice pouch. Spices include cinnamon sticks, fennel, cardamom pods, anise stars, cloves and coriander. I'll add fish sauce and palm sugar towards the end. I've got the beef finishing off in the oven. The beef trio includes beef rib bones, strip steak and chuck - seasoned with only kosher salt, seared in evoo and deglazed with water. Happy PHO-RIDAY ya'll!!
This broth smells PHO-nomenal!! 😍 I'm using a deep-fried turkey carcass and bones from Thanksgiving along with the usual suspects - onion, ginger, cinnamon sticks, anise stars, cardamom pods, fennel, whole cloves and coriander seeds.😋
Chilly weather calls for pho 🍲 I've noticed more pho spots opening up in Corpus, so we decided to check one of them out last night before trying to tackle more Christmas shopping. We hit up Pho Texas Noodle & Grill on the Southside of town. Tried finding them on social media with no luck. This was a quaint little spot with cute/unique decorations and chill atmosphere. Both my sister and I opted for the pho ga (chicken pho). Broth was yummy, chicken was extremely tender. They were pretty dang busy for a Sunday night, but overall I was happy with the service. What do you crave after you get the flu shot and are feeling the “I may be getting sick...?” side effect? Pho of course! For some reason, this pho resto has been popping up on IG a lot lately. When I drove to the plaza, I realized I had actually seen this place and just never thought much of it. I was very wrong! I’m so glad I made it here during a snowstorm...you know, gotta satisfy the craving when the body isn’t 100%. For $8.75 (regular size), I chose my soup base (beef broth, had to go original for the first visit), my toppings (you could get all OR just one), your choice of noodles (fresh or rice). For toppings I went with rare beef, flank, tendon and tripe. There’s also chicken and beef balls on the toppings choice. The broth was outstanding-clean, flavourful and not deadly with the sodium at all. (The broth is always my litmus test for judging a bowl of pho.) Oh and you can also get your bean sprouts cooked or fresh. The portion is very generous...think I could’ve split a bowl with some appetizers. Will be back very soon with a big group so we can try more variations in their broth and their weekend-only specials.
