My holiday gift to all you lovely people and especially my bro @dierrez: bourbon pecan pie. First, get you 4 cups of fresh Texas pecans. I like to use about half chopped pecans and half pecan halves. Soak ‘em in that good ol’ Jack Daniels. Don’t use the expensive shit, it’s a pie. How much Jack? Idk let your conscience be your guide. Soak them babies for at least a few hours. . For the dough: mix 1 1/4 flour, 1/2 tsp sugar, 1/2 tsp salt. Cut in one stick of cold butter (4 oz), which you’ve already cut into small pieces. Work quickly so the butter stays cold. You want to get it to where it has some small cornmeal sized bits, some pea sized bits, some lima bean sized bits. Sprinkle in 1/4 cup ice cold water. Like really cold. Don’t work it with your hands, you want it to stay cold. Mix just until it starts to come together, then dump onto a piece of plastic wrap and squeeze into a ball, then into a puck shape. Put this back into the fridge for at least an hour. For the pie filling: get your oven to 350 degrees. mix up 1 cup maple syrup, one cup sugar, one tsp vanilla extract, three eggs (one of mine was a double yolk 😳) and 2 tbsp melted butter. No one said this bitch was healthy. Dump some of that over your pecan halves and then mix your chopped pecans into the rest. All the Jack that didn’t soak into the nuts, that goes in here. Add about a half cup semi sweet chocolate chips. Now I know everyone’s gripe about pecan pie is that it’s too sweet but hear me out here: you use semi-sweet or bittersweet chocolate, that plus the whiskey actually provides a nice bitterness that counteracts the sweetness. Get your crust ready: roll that shit out with a generous amount of flour. You see all those butter splotches? That’s a flaky crust y’all. Dump that filling in. Put the pecan halves on top in a classy ring pattern, fuck yeah. Cook for 60-70 minutes. Cool completely & refrigerate before serving so it gets solid, just like your arteries will be. #thanksgiving#recipe#pie

PSA: it's persimmon season! 🍊 had a hachiya persimmon for the first time today and it was a semi religious experience. No wonder the Greeks called persimmons the "fruit of the gods" 😇 Not the prettiest picture, but just wanted to share the beautiful, melt-in-your-mouth, custard-like consistency of my ripe hachiya... it's so so sweet 🙌🏻
Setting: A stove. A pot. Medium high heat.
Little bit of olive oil.
Add minced garlic which will sizzle to let you know that the pot is hot enough. Also a good buffer between the meat and pot.
Some ground beef. Some chili beef.
Black pepper. Salt.
First round of chili powder, paprika and cumin.
Jalapeños and an onion. Make sure the onion is cut into big strips so your wife can pick them out.
Second round of chili powder, paprika and cumin.
Pinto beans, kidney beans, black beans. Drain the black beans so the can juice doesn’t turn your chili black. Accidentally drop a single black bean down the drain. Dwell on that single black bean for way too long. Just let it go man.
Cans of fire roasted, diced tomatoes.
Third round of chili powder, paprika and cumin.
Take a picture of it so you can brag. It’s colorful.
Pour some Shiner Bock beer in it.
Doubt. Not just about my chili making skills, but also lots of self doubt.
Probably add more spices and more beer.
Eat. . ..in a bowl with cheese and saltine crackers. Maybe some sour cream if you’re feeling fancy.
It’s impossible to make a pie w/o using your brain + your ❤️. So spending time in the kitchen at this time of year - working dough, making all the pie - is one of my favorite, most anticipated traditions. It’s how I reflect, turn in + share the kind of care we all deserve every day of the year, but sometimes only get to fill-up on as the celebrations begin. Eat your pies, friends. 🥔 Organic Mash Potatoes!!!! Such a simple Classic delicious mash recipe: boil organic potatoes (they are naturally high in Vitamin C) then mash with a dash of almond milk (or hemp milk or TigerNut milk) and add some coconut oil!
