Last night: Another 'Dry Braised' recipe. But this one is slightly different, it's with Hunan flavour. Using booth Chilli Bean Paste and crushed dried chilli, no sichuan peppercorn but with lots of chopped ginger and garlic. No sugar but with vinegar. Only a touch of dark soy for the colour. The fish is first fried and then cooked in the sauce, eventually when almost most of the sauce absorbed back into the fish, you are done. Pan fried Talipia
1-2 tablespoons Kerri gold garlic and herb butter
Approx 5 oz of fresh talipia
Melt butter in pan over med heat
Place talipia in pan and while cooking spoon butter over top of fish. Do this a few minutes on both sides getting a light sear on the fish. I topped with a little Himalayan pink sea salt and some pepper.
This was light delicate and delicious on its own. However I ate half and turned the second half into a fish taco by simply placing in a romain leaf with some fresh cilantro leaves and about a teaspoon of chipotle mayo. 😊
My cousin Anthony told me about how to cook fish like this. Superb! Just pat your fillet dry. I put a little seasoning and drizzled in olive oil then rolled in bread crumbs and put on cookie sheet put the oven rack in the top position and baked at 500 degrees for around 6 min.
