Heres the recipe for my black bean ragu with turmeric rice! I love eating colourful food😍 ⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS: (For the ragu) 🍅1 tbsp olive oil 🍅1 small red onion (diced) 🍅1 garlic clove (crushed) 🍅2 tbsp tomato purée 🍅150g black beans in water(drained) 🍅250g tinned tomatoes 🍅Salt and Pepper and basil (for the rice) 🍚1 cup rice 🍚2.5 cups water 🍚2 tbsp @lucybeecoconut oil 🍚1-2tsp @lucybeecoconut turmeric ⠀⠀⠀⠀⠀⠀⠀⠀ DIRECTIONS:
1⃣in a saucepan heat the oil over a low heat. Add the onion and sweat until clear. Add the garlic and stir well.
2⃣Add the tomato purée and then black beans. Add the tinned tomatoes and basil and season well.
3⃣Turn the heat to low and leave to simmer. Stir occasionally.
4⃣Place the rice on the hob and bring the water to the boil.
5⃣Leave until the water has evaporated and the rice is soft but stir occasionally to stop from sticking to the bottom of the pan.
6⃣Remove from the hob and stir in the coconut oil until the rice is sticky. Then add the turmeric.
7⃣Serve and enjoy❤
