Another successful Vegan Dinner Night
Tofu Bolognese w/homemade Zoodles (Zucchini noodles)
I poured through tons of recipes this weekend trying to find the perfect recipes to #1 ) ease the hubs into my new adventure and #2 ) fit within our dinner #macros . In theory, this one is perfect, but I wasn't sure how successful I was gonna be considering I was short on time and rushing. It's a super easy recipe but takes time to bake/dry the tofu. You can prep the tofu ahead of time....which I'll totally be doing next time. *
The hubs isn't the biggest fan of #zoodles but he ate them. But more importantly, he went back for seconds of the "meat" sauce! YAS 🙌🏼
Ya girl has started working on her cookbook again 👏 Two years in the making, two hectic years of life getting in the way, but I think it's finally coming along! 🌿 I'm certainly not the most refined of cooks, or the most photogenic food assembler, but I want to create something that is easy, everyday, affordable vegan food to show everyone how achievable it is!
I spent 45 minutes on the phone with Xiamen airlines getting my meal preference set as "vegan" because there were no dietary preference options on the site. Fine (but not really fine. My time is important to me and meat eaters get to just board the plane without worrying about food, because they'll get served. In my case, if I board a plane without going through this BS they say "对不起，要提前定素食才有” or sorry, you have to order your veg meal at least 24 hours in advance). It's the same with all airlines. This is the kind of stuff we get served and frankly, if this were ACTUALLY what vegans ate, I'd totally understand people thinking that a plant based diet is horrible. But if you look at my page you'll see vegan roast duck, vegan bacon, vegan dumplings, and all kinds of delicious, wholesome, nutritious foods. As journalist Ezra Klein once said, "being a vegetarian shouldn't be a culinary punishment." But frankly, it sometimes is, when you're fed by people who don't put any thought into providing us with an actual meal as well as an inconvenience. I spent an hour of my time to ensure I would have food on the flight and this was my reward. The moral of the story is, please folks, keep us in mind at your events and dinners. We like good food too. The other moral, for vegans and vegetarians, is that we shouldn't put up with this bullshit. There are many worse things in the world to worry about, nonetheless, this is unjust and harmful to society cause everyone around sees my pathetic little dish of steamed frozen vegetables and rice and thinks "I could never do that" and the result is that we collectively fail to address the single biggest contributor to deforestation and myriad other gigantic global problems. 🔥🔥🔥 Dan Dan Noodles and spicy cucumber side dish. The noodles had diced king trumpet mushrooms, celery, scallions, spinach, five-spice tofu, and fresh #vegan noodles from #hmart . So good. I tried to make myself a bowl since I didn't eat much today. However, I was ambitious and failed 😂too much to chew so I ate like half. It was very tasty though so I will save the other half to eat tomorrow. Pictured is brown rice with chopped Cauliflower, a baked empanada, tomatoes, extra tofu potato filling and greens. I ate the entire empanada with gusto (eat through the pain only for the empanada). ❤️
Yeah, this is tofu in the most basic form you could imagine. There's something I need to say here so excuse me as I vent here. It's clear that most of the world's population, is infatuated by the idea of eating dead animals. Saying this outright, is so hard especially since people constantly put up a defense with everything. I'm coming from a good place when I point this out but sometimes, I get some form of backlash that just urks my damn soul. This food was just fine and I had a good time eating it. I'll wait for veganism to spread as I know it will. Y'all gonna watch me eat plenty food.
It is easy to get protein from meat BUT it is easy to get diseases and easy to pollute the environment when consuming meat, too. I admit I love meat but I am very willing to significantly lessen my intake of it. For now, I will commit to #meatlessmonday . For protein substitutes, we could turn to plants. Look up #quinoa , #beans , #chickpeas , #chia ,#tofu and #buckwheat and see how much protein they have plus added benefits.
