Starting off the day with a breakfast pizza made with @califlourfoods cauliflower sweet red pepper pizza crust and a generous spread of the most delicious @avocadoorganic California grown fuerte avocado, topped with tomato slices, arugula, black olives and a fried egg. Hi, I hope you had a great weekend. A long busy morning equals an early lunch. Spinach salad with a hard boiled egg, chickpeas, pasta salad, olives, avocado and tomato with olive oil, lemon juice, salt and pepper. Have a wonderful day!
What’s your favorite cooked breakfast? Although Sunday’s are normally for pancakes and waffles, this morning I felt like Tofu Scramble with sweet and juicy roasted tomatoes, skillet fried mushrooms and wilted spinach! Life's stew short to not enjoy delicious and healthy food! :) Ingredients:
1 Tbsp. Olive Oil
1 Onion (chopped)
2 Garlic clove (chopped)
3 Zucchini (unpeeled, cubed)
3/4 Tsp. Salt (or to taste)
1/4 Tsp. Pepper (or to taste)
28 oz. / 800g Tomatoes (canned, diced)
4 cups (32 fl. oz. / 946 ml) Water
0.9 oz. / 25g Parmesan (grated)
Basil (small bunch, chopped)
1. Heat the olive oil in a pan over a medium heat, add onion and cook for 5 minutes, or until softened and starting to go golden brown, stirring occasionally. Add the garlic and cook for 2-3 minutes more.
2. Reduce the heat to medium-low, add zucchini, salt, and pepper and cook for 5 minutes or until zucchini starting to soften.
3. Add diced tomatoes, water and mix well to combine. Bring to the boil over a high heat. Reduce the heat to medium and simmer, uncovered, for 35 – 40 minutes or until the tomatoes are reduced, zucchinis are soft and mixture thickens.
4. Stir in grated parmesan and basil and enjoy!
