1/2 cup Soy milk
1/2 cup Water
1/4 cup Melted Soy Margarine
3 tablespoons Smartfruit Perfect Peach
½ tsp Vanilla Extract
1 cup Unbleached All-Purpose Flour
1 small Apple
1 Kiwi, peeled
6 medium Strawberries
1 medium Peach, peeled and pitted
½ cup Coconut Yogurt
2 tbsp Smartfruit Perfect Peach
1. Place ingredients for crepes in a blender in order listed. Secure lid and blend on medium speed for 20 seconds. Allow batter to rest in fridge for two hours before cooking. in a separate blender jar, add coconut yogurt and Smartfruit Perfect Peach and blend on low speed for 15-20 seconds.
2. Dice all fruit into small pieces and place in medium mixing bowl. Pour yogurt mixture over fruit and stir to combine. Set aside in fridge while cooking crepes.
3. Heat a skillet or crepe pan over medium heat and lightly coat with oil or cooking spray. For each crepe, pour ¼ cup batter into center of pan and swirl pan gently to distribute batter in a thin layer. Cook for 1 minute or until the top begins to dry out and underneath is lightly golden. Flip and cook an additional 30 seconds until done. Repeat with remaining batter.
4. To serve, fold crepe in half, fill with desired amount of fruit salsa and fold over again. Top with additional Coconut yogurt and drizzle with Smartfruit Perfect Peach. Enjoy!

Well it has been 2 years. It's been two years since I became vegetarian. It all started with being a pescatarian, then moving on to a vegetarian, and now, vegan. Three years ago I would have never even thought about being vegan. It seemed so stupid "why would I be? It be so expensive" it took some research, it took someone to open up my eyes a little. Animals are abused, used hurt, emotionally and physically. They are brought up to be food. And I won't stand for it. I'm not malnourished, I'm healthy, I consider myself fit, and I feel so good about everything. There are so many things you can eat instead of meat, diary, and well... Animals. I'm not going to force this one any of you of course. But, this is where my morals lie. I just want to tell you, all those myths about bad health, and expensive life, are not true. It any of you are interested, I watched a documentary last night. A second one by these people now, called "what the health" now, it's eye opening. You learn everything you need to know. I love spending quality time with my old man 🐱 Henry-Lee is 7 or 8 and I hope he lives to be 57 or 68 (but I know he won't). The sad thing about adopting old cats is knowing their time may be numbered. The good thing about adopting older cats is remembering how important it is to spend time with (your) pets every day. After a long day with humans I go see Bert who literally seems like a cute bunny alien to me. When humans are mean I go lie with Henny in the cupboard or snug Princess on the bed. My kitties and bunny are so important to me. They are my lovely lovely beams of light and therefore life. Animals have so much to give.
