Ah... It took me two weeks to post the recipe for lentil loaf I made some time ago 😝 Summer is in full bloom here in #Sarajevo and I've been spending more time in nature and less online ☺️... You know me... getting distracted easily, which ruins my consistency in posting regularly 🙃... -----
Note: Original recipe from @onegreenplanet website. I modified few things according to my taste and mood at the time of cooking 😋
Lentil Loaf Recipe
2 cups water
1 cup green lentils
2 flax eggs (2 tbsp flaxseed meal + 4 tbsp water)
2 medium carrots, shredded
1 small zucchini, shredded
1/2 medium red bell pepper, diced
1 tbsp olive oil
1 cup rolled oats
1 cup tomato sauce
1 tsp dried basil
1 tsp dried parsley
1/2 tsp cumin powder
1/2 tsp salt (or to taste)
1/4 tsp black pepper
Pinch of asafetida
BBQ sauce: 1/3 cup ketchup
1 tsp liquid smoke (or 1 tsp smoked paprika)
1 tbsp mixed seeds
Boil 2 cups of water and add lentils. Simmer 25-30 minutes, until water is evaporated and lentils soft. Leave covered for 5-10 minutes. Partially mash lentils and transfer into a mixing bowl.
Mix flaxseed meal and water together and let it sit for few minutes.
Sauté diced bell pepper, carrots and zucchini in olive oil on medium heat for 5 minutes.
Add sautéed veggies and the rest of ingredients (except BBQ sauce and mixed seeds) to lentils and mix well. Spoon into loaf pan that has been lined with parchment paper. Top with BBQ sauce and sprinkle with mixed seeds.
Bake at 350 degrees (180 degrees Celsius) for about 45 minutes until the top of the loaf is dry and golden brown. Let cool for about 5-10 minutes and carefully take it out of the pan. Top with additional BBQ sauce if needed.
I went back to the island of Gozo today just to eat more vegan ftiras from the best bakery in all of Malta. I went all out and got 4 ftiras. Two I ate right away and the other two I will eat tomorrow morning. Spent the day with these beautiful gentle giants 🐘My heart was bursting to be in their presence✨I fed them watermelon slices and washed them (I swear they were nearly smiling they were just so happy to be cared for)✨It honestly breaks my heart to think about how kind and sentient these elephants are and how so many people and corporations inflict pain on them all over the world for entertainment 😢 Such a special experience to interact with them this closely♥️

Believe it or not but I had my first papaya since I stopped eating them 1.5 years ago 😱 I remember having a bad one and it made me sick back then so I couldn't stomach the thought of eating them ever again! But when my boyfriend is getting all these beautiful papayas here, so how can I resist? And it wasn't too bad actually!
