It’s hard to resist the convenience, nostalgia and deliciousness of boxed mac & cheese. To up the health factor without losing the effortlessness, I choose @annieshomegrown organic, grass-fed mac & cheese, throw in some organic frozen veggies, sub out the milk/butter with @stonyfield organic, grass-fed greek yogurt and stir in freshly grated romano cheese. #foodvibes#adulting#veggielife#organic#grassfed#macandcheese
SUNDRIED TOMATO, CHICKPEA, QUINOA AND BULGAR WHEAT BURGERS 🍅❤️. Served with homemade chunky coleslaw (see previous recipe) and sweet potato mash.

🔅6 sun-dried tomatoes
🔅1 tin of chickpeas
🔅1 red onion
🔅2 garlic cloves
🔅1 tsp of paprika
🔅2 cups of cooked quinoa and bulgar wheat mix
🔅2 large sweet potatoes

1️⃣Chop the onion and garlic into small pieces, and blitz together with the chickpeas and sun-dried tomatoes in a food processor until a smooth paste.
2️⃣Mix the cooked quinoa and bulgar wheat in a large mixing bowl with the chickpea and tomato paste.
3️⃣Form into burger shaped patties and place in the fridge for 30 minutes to firm up. Preheat the oven to 200degrees Celsius.
4️⃣Meanwhile, prepare the coleslaw (previous recipe) and pierce the sweet potatoes several times with a knife.
5️⃣Cook the sweet potatoes in a microwave for 15 minutes, turning over half way through.
6️⃣Once cooked, scrape the inside of the sweet potato out of the skin and season with the butter, salt and pepper.
6️⃣Place the burgers into the oven and bake for 25-30 minutes or until golden brown.
7️⃣Plate up and ENJOY.
Not really sure how I managed to resist this tasty little croquette till I got home. But it was so good with some greens and a splash of sriracha. Pretty much the only vegan food I could see at the #northdevonfoodfest , apart from the obvious fruit and veg. Wish I'd bought another one but I've some other bits and pieces to try yet. Yesterday I made #homemade bread on a whim! So messy, so simple, so fun. And for a first attempt (since childhood!) I am quite impressed with its gooeyness on the inside and crunchiness on the outside! #wholewheat as that’s the flour I have in the house! Do you bake bread? How do you make yours extra crunchy?
