I had the absolute pleasure of attending an event held by @frankandwhit - the cruelty free/environmentally friendly skincare company I constantly post about! .. all proceeds (over $2000) went to the 🐶🐱 SPCA! We practiced yoga, we ate amazing food, we got to watch an awesome holiday recipe demo by @frommybowl and I was surrounded by a room full of people who think just like me!

I am so used to most people NOT understanding why I live the way I do - people who think I’m missing out on “bacon and cheese!” .. so being in a room full of like minded folks was such a bad ass feeling!

Heute Mittag waren wir im rumänischen Restaurant 😉 Da meine Landsleute relativ fleischlastig essen, gibt es dort nicht so viel für mich auf der Karte. 🍴 ABER es gibt immer super leckere Kartoffelgerichte 🥔🍟 Somit bestelle ich fast immer das Gleiche: Wiener Kartoffeln mit viel Petersilie und Ajvar 😀 übrigens, ich habe früher auch extrem viel #fleisch und Wurst gegessen. Bis vor 5 Jahren wirklich täglich zu fast jeder Mahlzeit. 🍗 Es war also eine große Umstellung für mich auf #vegan umzusteigen. Das habe ich fast 4 Jahr durchgezogen und mittlerweile esse ich wieder Eier und sehr selten mal an Familienfeiern etc. auch etwas wo eventuell mal ein Milchprodukt enthalten ist. Also so zu 95 % vegan 🌿

Crockpot Chicken & Wild Rice Soup
2 Chicken Breast 
1 Shallot (finely chopped) 
3 Carrots (chopped small) 
3 Celery Stalks (chopped small) 
2 Cloves Garlic (use garlic press) 
Salt, Pepper, Thyme, Rosemary, 1 Bay Leaf
6 Cups Chicken Stock 
3/4 Cup Wild Rice Blend . 
Put in all up in your Crockpot, cook on low for 4 Hours. Check at 3.5hrs & shred chicken, I just grab 2 forks & shred it right in there, let it finish cooking or serve if it’s good to go.🤤😋👍🏽

Notes: I use the brand of rice pictured, I’m not sure if all brands will work the same, they may need more or less cooking time. And I’m having my soup in a glass bowl in the last pic, looks like it’s floating.😂

Have meal prepped some version of my "Super Oats" recipe in the pic too many times to count. It's what I eat on mornings when I have endurance workout, going low carb on these days makes me feel 😐😕😩😱

I cook with quinoa and and omega seed blend (flax, hemp, chia) from @nowfoodsofficial to add a boost of protein, iron and heart healthy fats. Prepped as shown and using water as liquid, has 188 cal, 5g fat, 8.3 protein and 30g carb (6g fiber and 0.1 sugars) .

But i also mix in other yummies to suit my mood, usually chocolate  protein powder and some delicious toppings like @ndmedjooldates dates and other dried fruit, fruit, seeds, nut butter, etc. SWIPE RIGHT 👉 👉👉👉for the pics 👀 and add this to your collection.

Meal prep definitely takes planning, but it doesnt have to be stressful! If you need help with your meal plans, lets chat!

Here are some tips to keep your meal planning simple and easy: 👇👇
1. Take stock of your kitchen.  Every Wednesday evening I go through my fridge and cabinets to check what food staples I've already got on hand. This week I had potatoes, red onions, some chicken tenderloins, brown rice, cooked lentils, lettuce, and feta. I know immediately that I want to work those ingredients into my meal plan. No need to buy more food than I need!
2. Sit down and write out your meal plan. I usually spend a portion of my lunch break on Thursday putting together the actual meal plan.  I write down what I already have at home and fill in the gaps with additional items to complete each meal. 
3. Make a grocery list. Once ive completed my meal plan I'll make my grocery list with the additional items I need from the store. Make sure to include amounts of each item so you arent under OR over buying!
4. Go shopping - STICK TO THE LIST. Sticking to the list is KEY to your success.  Don't go to the store hungry,  you'll buy everything in sight.  Try to stay away from the inner isles as nearly all of that food is hyper processed and FULL of chemicals and preservatives.  If you can't pronounce it, you sure as hell don't want to eat it! I usually go to the store on Friday during my lunch break or after work.
5. Get cooking!  I wish I could say I've got a cooking system down, but I tend to start all of my meals at once and have like 80 things going at the same time.  I don't suggest doing it that way... 🙈🙈 Ha!  Take one recipe at a time and focus on that, then move on to the next one. Sunday is meal prep day for me!

Find something you like and make a huge batch of it - like a veggie salad or grilled chicken breasts.  Even if you dont get all of your meals for the week prepped, having a few things on hand that you can quickly throw together really helps!
