Tonight's cooking adventure - shakshuka! This was my first time making it and it's going to be my official easy peasy midweek meal. Just sauté some onions and garlic in a cast iron with a lot of crushed red pepper (the classic recipe calls for a spicy red pepper but I seriously can't stand them so I just used the chili flakes oh well 🤷🏼♀️), then add a can of whole peeled tomatoes. Add salt, pepper, cumin, cayenne, and paprika. Let it simmer then stir in feta and crack some eggs and slip in the oven! We used some warm homemade bread to dip it in. Happy Wednesday!
