I (Laura) am now halfway through my #Veganuary challenge and I’m finding things easier as the month goes on as I’m beginning to remember what is & isn’t vegan! (I am liking oat milk in tea as opposed to soya milk which has a weird aftertaste?!) Curly fries have been my ‘quick junk food’ saviour and I’ve been enjoying trying new recipes. Although in England I wouldn't necessarily consider a cereal soup a treat, in italy they take pride in all their food and this traditional 'zuppa di cereali' is delicious for vegans and non vegans alike. Do you like this soup?
Someone posted their breakfast on Twitter & it seemed such a good idea. So, homemade coffee/dark chocolate/dark cherry/pecan granola, with banana, Alpro plain with coconut, & Meridian crunchy peanut butter.
Can't remember if I bound the granola with agave or honey (probs the former) or guarantee choc chips have no milk but *possibly* #accidentallyvegan and certainly easy to change up those 2 ingredients.
Penang curry with roasted parsnips and carrot, spinach plus a food-waste saver - broccoli stalk! 🥦 Just trim the woody bits off and dice up, takes a bit longer to cook than the stalks but tastes pretty similar. Also a good way to bulk up a curry or sauce. You could even grate it and add it to risotto or make fritters. I made the Penang curry paste last month, the recipe (in The Guardian) makes lots so I froze half for future dinners. Just add veg and coconut milk!
Finally, a vegan Swiss Rosti! I’m spending a few days at a little B&B run by a Swiss family near Zurich... and they are all vegan 💚 .
The weather’s been quite crazy, with a snow blizzard and rain and hail and insane winds, so I’ve mostly been indoors in my cosy wooden house, eating delicious vegan food from their kitchen and working. There’s a lot of emphasis on health and whole foods here and I love that. .
Oh, and I’ve actually been craving a Rosti after all these days in Switzerland, but turns out, restaurants rarely do it without butter. Glad I finally had my first ones and topped with red cabbage and onions, it was delicious! .
Meal at my aunties last night and I realised how awful I am at posting on here 🙈 I forget to take pictures because I just want to eat! they had chicken stew and I had a pizza I made with the Lidl garlic bread pizza base 🌱 Tbh mine looked much nicer and I know it tasted better 😏 with spicy tomato sauce, red onion, sweetcorn, kalamata olives and peppers. And it was soooo so good. Little salad on the side because #nutrients . Also I’ve remembered how much I like beetroot 👌🏽 #babybeetroot#beetrootfan#vegandinner
Second time EVER having tofu and first time cooking it myself and I’m sure I did something wrong 😅 It was nice and almost crunchy on the outside but pretty chewy and tasteless on the inside, any tips? Had it with frozen veggies, 3 tbsps of soy sauce and 1tbsp of sweet and sour sauce and bread 🍞 I actually came home early from college today because I’ve been feeling pretty weak and unmotivated lately, might speak to my mum about that! 🙃
