Let’s be honest, the timing will never be right ...holidays, birthday parties, upcoming events, vacations.. TIME is just a an excuse 😶 
My FAVORITE  is “I’m just so busy!” But aren’t we all?! AND January…there is nothing special about January! It’s just another month.

I made the same New Year’s resolution every year...get in shape and stay that way! 
FAIL! 
It was a vicious cycle of eating super healthy only to fall off the wagon in mid February-March.

In 2015, I went to Cuba with friends and I was overweight and uncomfortable.
Nothing fit right ...and there’s nothing worse than feeling uncomfortable on a vacation!

But this vacation to Thailand was different 😁. A year ago I finally threw away my excuses, and joined an accountability group! 👉I gave myself just 30 minutes to workout AT HOME! 👉A little meal prep each week = MORE ME TIME  when I’m too tired to make meals 🙌

Now I’m 25 lbs lighter and so thankful I MADE TIME! 
It really comes down to adjusting your time😁😁 Because I bet you can find 30 minutes to workout AND plan a few healthy meals... On Monday December 11th, me and 5 other ladies are throwing away our excuses!

We are dedicating ourselves to 30 min workouts ...
Some simple meal prep...
And straight up accountability!

Yay!! I think the crazy weather is passing! The sun is out for the first time in a few days. I don't know how I survived life in the PNW + NorCal for those 9 years without the sun. It makes me so happy. ☀️ A few of my favorite things are sunshine, the warm sea and ocean breezes. 🌬🌴 Counting down the days till we are living on the beach and I can just run and jump in the water after my workouts or grab my board for a short surf or SUP. 🏄🏼‍♀️ We have a pool but I rarely use it because chlorine freaks me out. Too chemically. ☠️ Anyway, just checking in to tell you I got through MAX OUT SWEAT and am headed into the garage to do CHISEL AGILITY + 15 GLUTE CHISEL all while fasted. I'm not hungry yet and feeling good except for that double shot if energize Kevin gave me! I'm a 1/2-1 scoop kinda gal BAZING!! ⚡️😳 How many scoops of pre-workout do you use? #accountabilityworks #islandgirl #hi

This box of wonderful spices is from a challenger and friend!  She trusted me enough to say "YES" when I reached out and now feels like a whole new person.  That whole new person is a result of YOU, my friend, for wanting to be better than you were yesterday! .

I love Fridays...for many reasons!! One of them is because in my private challenge groups it's Flex Friday! It's a day for us to celebrate our successes of the past week and how we are making progress no matter how fast or slow.

I love doing this because we take the time to recognize our accomplishments. Life moves too fast and change is not easy. So if we don't take the time to look back, celebrate, recognize, leave behind mistakes...we will fall back into old habits that don't serve us well.
.
So...STOP!
Recognize at the accomplishments of your week. 
Leave behind the mistakes.
Do it every week.
Week after week.
And before you know it, you will look back and see a big difference!

If we didn't have the opportunity to do this weekly in my groups, I may have quit this week. I have been struggling to recommit to my routine after my trip to take care of my mom. But the support in my groups helps me not give up. .

Recipe of the day: Lemon Garlic Chicken Pasta
.
Ingredients:
3-4 Chicken breast cut into 1" cubes
8oz linguine (half a 1 lbs box)
1 cup loose leaf parsley (fresh and not chopped)
1 cup cherry/grape tomatoes (quartered)
1 clove garlic (grated)
3 tbs olive oil
1 Lemon (juiced)
salt/pepper to taste
grated parmesan cheese (optional)
.
Directions:
I'm going to break this up into two parts - the stove top parts then the sauce/dressing.
Stove Top:
1. Start water for pasta
2. Put 1 tbs of olive oil in a large sauté pan on medium heat. 
3. Once heated add all of the chicken and cook until browned on all sides.
4. Add the tomatoes and parsley and set aside on low heat - stirring occasionally.

Sauce/Dressing
1. Mix 2 tbs of olive oil and the juice of one lemon into a dish
2. Grate one clove of garlic
3. Add salt and pepper to taste
4. Whisk and you're done!

Put It All Together!
1. Drain pasta and add it to the chicken pan
2. Add the lemon-garlic sauce
3. Mix all together
Optional: Add grated parmesan and toss

It's been tough trying to re-prioritize my mornings and still fit it all in having to leave a whole hour earlier than normal for training. I got my 30 minute workout in this morning but didn't have time to squeeze my 10 minute abs in. We're also starting 12 days of challenges in my Fit-mas group and today's was alphabet moves which I didn't have time to squeeze in either. Without my group to hold me accountable I would have totally just skipped both tonight! Instead,  I cranked them out while dinner was cooking! And I had a pretty cute workout partner too ❤

I DID IT!!!! 9 weeks of being committed to a program. Back 63 days ago, I didn’t think I could do it and I didn’t know if I’d like these types of workouts. But if anyone wants to see change, one must challenge themselves. Usually this program is 3 weeks, but I loved it so much I kept going!! 😁 Here I am 63 days later and I feel amazing!! 🙌🏻 I loved this program so much, I did another workout from it today!!

Recipe of the day: Chicken Florentine
Servings 1 Serving

Ingredients:
1 tsp. olive oil
2 cloves garlic finely chopped
1 (4-oz) raw chicken breast boneless, skinless, pounded thin
1 cup steamed spinach
1 slice part-skim mozzarella (or provolone) cheese (about ½ oz.)
.
Directions:
Preheat oven to 400° F. 
Heat oil in ovenproof skillet over medium-high heat.
Add garlic; cook, stirring frequently, for 1 minute.
Add chicken; cook for 3 to 5 minutes on each side, or until no longer pink in the middle. Remove from heat.
Top chicken with spinach and cheese.
Bake for 2 to 3 minutes, or until cheese is melted.

The weekend was jam-packed and I was feeling sluggish 🐌last night so I decided to turn in for the night and let my body recover! I woke up feeling energized and ready to go for a new week🎉 a fresh start. .

It is so important to listen to your body, right?  This time of year it is easy to overlook the needs physically and mentally and press on. However, the most important thing is to take care of ourselves so that we can enjoy and take care of others too. .

Because of an awesome 🛌night sleep, I had extra energy 💃🏻this morning so I added on a HIIT 15 workout!  Bring on December! 🎄

I’ve never experienced any of those intentionally self- destructive behaviours (and God forbids🙇🏻‍♀️) and I rarely, if ever, have punished myself after being a bit indulgent. But after last night’s Venezuelan feast (where I had a little too much to eat and not at the best time of the day🙈), I decided to replace my usual yoga routine and pulled out the big guns.
. 
Don’t get me wrong, I’m not punishing myself, I would still have all the good stuff I had last night if I had the chance, I just needed a more intense workout to justify yesterday’s extras. This nice and short routine will do, 35 minutes of athletics moves always give me a good sweat 😅, not to mention that we are being closely monitored by the creator himself. 
I think I started my Sunday pretty well, eh?

I love a Diet Coke, but knew it was not helping my life change. So I switched to sparking water. I thought it was going to horrible, but I like it. I like the freshness to it and the bubbles. Easy change.

Recipe of the day: One Pan Cheesy Chicken and Broccoli with Quinoa
Servings: 4
.
Ingredients:
1 lb boneless skinless chicken breasts, diced into 1-inch cubes
3/4 cup chopped yellow onion
1 Tbsp olive oil
2 cloves garlic, minced
Salt and freshly ground black pepper
1 (14.5 oz) can low sodium-chicken broth (1 3/4 cup)
1 cup dry quinoa
1/4 tsp dry thyme
2 1/2 cups chopped fresh broccoli florets
4 oz shredded sharp cheddar (1 cup)
.
Directions:
Heat olive oil in a deep skillet over medium-high heat. 
Once hot, add onion and saute 2 minutes, then add chicken and cook 2 1/2 minutes stirring occasionally. 
Add garlic and saute 1 minute longer (chicken should be cooked on outside but inside doesn't need to be fully cooked through at this point because it will boil and simmer). Add in broth, quinoa and thyme and season with salt and pepper to taste. 
Bring to a full boil then cover, reduce heat to a simmer and cook 12 minutes. Then quickly lift lid, sprinkle broccoli over top, recover and simmer about 8 minutes longer or until quinoa and broccoli have cooked through (it may have a little broth in the bottom still at this point and you can carefully drain it off if desired, just don't pour everything down the drain!). Sprinkle cheese over top, cover and heat 1-2 minute until cheese has melted.

Truth 💣............. I get tired of working so hard sometimes at the weight loss thang. I get discouraged at times. I slip into negative thinking. I forget to focus on how far I have come! 🙇🏼‍♀️🤦‍♀️ But this is a journey! A lifestyle! No change is EASY! 
So some days I have that 🍩 and then a 🍪 🤷‍♀️ Other days I rock my workouts and focus on 🥦🥒🥕🍉🍇 And the thing is there are way MORE of those days now with mostly healthy eating and exercise and the truth is it has become much easier and habitual now than a year ago 🔥💥 But there are still hard days. And that is okay👌

On the harder days I reach out to the ladies in my accountability group. Recipe of the day: Philly Cheese Steak Sliders
4 servings, 1 each

Ingredients:
2 tsp. olive oil
1 medium onion, sliced
1 medium green (or red) bell pepper, sliced
8 oz. sliced mushrooms
1 Tbsp. finely chopped fresh oregano (or 1 tsp. dried oregano leaves)
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
8 oz. raw lean beef sirloin, sliced very thin
¼ cup sliced banana (or cherry) peppers (optional)
2 oz. thinly sliced provolone cheese
4 small whole wheat rolls, split, toasted
.
Directions:
1. Heat oil in large nonstick skillet (or griddle) over medium-high heat.
2. Add onion and bell pepper; cook, stirring frequently, for 3 to 5 minutes, or until onions are soft.
3. Add mushrooms and oregano. Season with salt and pepper if desired; cook, stirring frequently, for 3 to 5 minutes, or until mushrooms are soft.
4. Add sirloin; cook, stirring frequently, for 3 to 4 minutes, or until beef is cooked through.
5. Top evenly with banana peppers (if desired) and cheese. Remove from heat; cover and let stand for 1 to 2 minutes, or until cheese is melted.
6. Top buns evenly with meat mixture; serve immediately.

Tip: To make slicing sirloin easier, freeze it for approximately 30 minutes before slicing.

Day 60 ✔️ Holy moly I can’t believe it’s been 60 days since I decided to make a change. I am so happy that I did! 😁 I loved my workout today! I did this same workout the other day and it is definitely one of my favorites. I also did abs with a sandbag and I can honestly say that is my favorite ab workout! 😅

The best approach would be to start where you are and keep on improving every day. . If we wait until we are ready, we will be waiting for the rest of our lives. It's not about being the best. It's about being better than you were yesterday. 💗 . Day 60 ✔️ Holy moly I can’t believe it’s been 60 days since I decided to make a change. I am so happy that I did! 😁 I loved my workout today! I did this same workout the other day and it is definitely one of my favorites. I also did abs with a sandbag and I can honestly say that is my favorite ab workout! 😅

Checking in with my virtual fitness pals and feeling so freaking inspired by all of them. 
All of them are busy. All of them have other priorities. But ya know what?! All of them are showing up every day in the group and rocking their workouts. 
Why?
❄Because they are committed. 🎄Because they are making themselves a priority. 🎅Because they are motivated to continue their journey. ☃Because they are worth it. 
One of the babes started her health journey with me over the summer to get fit for her wedding. She took a break from the groups the month after her wedding. But she found she wasn't staying consistent with her workouts. You know why? Because she didn't have the motivation and support she needed to stay on track. And now that her wedding is over she's back && ALL IN!! && crushing her workouts!! PS this bride looked 🔥smoking hot🔥 on her big day!!👰💍💐 Here's what else she had to say about the groups: "it's not all about going to the gym and dealing with all these crazy people. It's literally me talking to girls on Facebook. It's not this creepy, random, unwanted conversations at the gym. It's basically 'Hey girl, look at me! I did this workout.'" This box of wonderful spices is from a challenger and friend!  She trusted me enough to say "YES" when I reached out and now feels like a whole new person.  That whole new person is a result of YOU, my friend, for wanting to be better than you were yesterday! .

Recipe of the day: Taco Pizza
Servings: 2

Ingredients:
2/3 cup of ground turkey
2 tsp of salt-free taco seasoning
1/3 cup of shredded cheese, (Mexican blend)
1/2 cup fresh salsa, or tomatoes, peppers, red onion and cilantro, diced and mixed
1/4 cup of black beans and corn
lime
cilantro
2 Flatout wraps
olive oil spray

Directions:
Preheat oven to 350 and spray wraps lightly with olive oil spray.
Season ground turkey with salt-free taco seasoning and brown over medium heat.
Cook plain wraps directly on oven grate for a few minutes or until wrap is beginning to crisp.
Assemble pizza - top with equal amounts of ground turkey, salsa, beans, corn, fresh lime juice and cheese.
Put pizzas back in the oven and cook until cheese is melted and bubbly.
