Finca Santa Clara is 90 hectares in size and is located on the fertile southern slopes of the Volcán de Agua in the Antigua Valley at 1,600-1,830 metres above sea level. The farm has been managed since 1988 by Ricardo Zelaya, the 4th generation of the Zelaya family to have produced coffee at Santa Clara.

His farms are scrupulously well-managed – from the careful selection of varietals planted, to the close supervision of the dry and wet mills – both of which are located on the property and owned by Ricardo, giving him complete control over quality from picking through to export.

ガッツリ肉食夫婦はちょっと失敗かな。。
と思ったけど料理が来ると感動に変わった🙌

私が頼んだのはマッシュルームの方。
えのきがピクルスされてるのもビックリだったしフェタチーズに似せたのはおからでもなくアーモンドフェタ。
オットはアボカドの方でこれってちょっとシンプル過ぎる。。
と思ったけどカリフラワーが同じくピクルスだったのとビーツがスモークされたピューレで手の込んだ味。

どちらも美味しかった😋🍴

Processed at the privately owned Abiyot Boru washing station, named after its owner Abiyot Boru, coffee cherries are produced and delivered daily to the station by around 700 small producers. These producers farm organically on small plots of land (averaging 2 hectares) at 1,650-1,800 metres above sea level

THE STORY // Kiamabara is a coffee “factory” (washing station) located near the town of Karatina in the heart of Nyeri. Home to the extinct volcano Mount Kenya, this region has rich red volcanic soil, and produces some of the best coffee in Kenya.

Kiamabara is owned by the Mugaga Farmer Cooperative Society. The factory was built in the early 1980’s to process cherry from the small producers in the area. Today 910 producers contribute to the washing station. They own small plots of land at an average altitude of 1,900m above sea level, and most grow SL-28 cultivars (a Bourbon hybrid from the 1930s developed by Scot Laboratories, now the National Agricultural Laboratories of Kenya)

Ricardo is passionately committed to both quality and sustainability.
