Orange cranberry star bread by @sean_laics 🎄
For bread: 3 tsp yeast. 1 cup warm water. 2 cups all purpose flour. 1/8 cup cane sugar. 1/2 tsp salt. 3 tbsp coconut oil.
For cranberry jam: 220 grams fresh cranberries. 1/2 cup orange juice. 1 cup sugar.
To make cranberry jam, put all ingredients in a saucepan, bring it to a boil. Once boiling, turn the heat down and cover it with a lit. Let it simmer for 5 min or until desired consistency.
Pour yeast in 1/2 cup warm water, sprinkle some sugar. Stir to combine and set it aside. Whisk flour, sugar and salt in a bowl until well combined. Add in oil and yeast mixture. 
Mix it with a wooden spoon then knead it on a floured surface for a couple of minutes or until you form a smooth ball. Keep the dough in an oiled bowl to let it rise to double in size (around an hour).
Once the dough has risen, divide it into four equal balls, then roll out each ball into a circle with a rolling pin. Use an 9” dinner plate as a guide.
Spread the cranberry jam on the first piece of dough, leaving half an inch around the edges empty. Lay the second circled dough on top, spread the jam. Lay the third layer and spread the jam. Lastly, lay the final piece of dough on top.
Place the dinner plate in the center and cut out the extra edges. Place a small circular object (like a glass) in the center. Divide the dough into 4 equal pieces, follow by clock wise.
Then divide each triangle into an equal half. Now you should have 8 equal triangles. Divide each triangle into half again, to a total of 16 triangle.
Now, hold the edges of 2 triangles, gently twist them out to opposite direction, twice. Pinch the end together. Repeat the same process for the other 7 pairs of triangles.
Once done, set aside and let it rise for another 20 min. Bake at preheated 175 C in oven for 15 min.

Rezept für ungefähr 6 größere Crêpes:
90 gr Mehl, 100 ml Mineralwasser, 100 ml pflanzliche Milch, einen guten EL Süßungsmittel wie Agavensirup/Kokosblütensirup/ FlavDrops (Menge der Süße je nach eurem Geschmack) oä. sowie eine Spitze Backpulver miteinander vermengen und etwa 5-10 Minuten ruhen lassen. Dann eine Pfanne mit Öl erhitzen und die Crêpes beidseitig auf mittlerer bis höherer Stufe kurz braten 😊

Good morning🤗 Yesterday I made this creamy berry smoothie bowl with silken tofu (adding tofu to your smoothiebowls is life changing seriously!!) and topped it with different kind of fruits, some hempseeds, granola and white almondbutter 😊 So happy with my new @ninjakitchende blender, the smoothie turned out so creamy and smooth 🙈😋

Yesterday it was snowing the whole day and there was sooo much snow outside ☃️❄️ Sadly it is raining today and the snow is melting away again.. But only two more weeks until christmas!! Are you in christmas mood yet ??✨🎄

This Christmas I give you my crepes. ❤️✨ Sweet Christmas Crepes served with freshly sliced apple, pomegranate and red grapes. I made these crepes with @odilejp during her stay in Lille. And although our first intention was to make chocolate crepes it turned into a total #foodfail. But sometimes the best miracles can come from disaster, and these crepes prove just that. This Christmas I give you my crepes. ❤️✨ Sweet Christmas Crepes served with freshly sliced apple, pomegranate and red grapes. I made these crepes with @odilejp during her stay in Lille. And although our first intention was to make chocolate crepes it turned into a total #foodfail . But sometimes the best miracles can come from disaster, and these crepes prove just that. The money shot, as my boyfriend at the time (and the one who took this embarrassing photo at what he bragged was the perfect time) calls this one.  This was taken a few years back, in NYC, at a raw foods restaurant.  Sadly, I can’t remember the name of it, but, I do remember how cold it was that day, how amazing it was to be in the city, and how excited we were to have found such a great spot with such stellar, clean, nutritious foodstuffs.  I also remember how good I felt after this meal.  That part is always memorable.  My cells sometimes feel like they are crying out for greens, and healthy, raw dishes and food, and as though they are bowing down in thanks afterwards. -

Creamy mushroom rigatoni 😍
This is seriously one of my favorite dishes, it’s so bloody delicious full of nutrients and so easy to make! 🌱💚
~
Recipe:
• 1 tbs of oil(or water if you want oil free)
• 1 yellow onion
• 3 cloves of garlic
• 3 big mushrooms
• 2 big handfuls of spinach
• 3/4 cup plant based cream(I used coconut cream)
• Cooked paste of choice
• Salt and pepper to taste. ~
Bring a pan to medium heat, add the oil. Finely chop the onion, cook until translucent then add minced garlic and chopped mushrooms. Add salt and pepper. Cook until tender then add spinach, cook for one more minute then add the cream, bring to a boil. Add cooked pasta of choice. Stir and serve. ~

- Meat of one young coconut (I drank the water before and was like „What can I do with the meat?“)
- Sweetener of your choice (coconut sugar, agave syrup, etc.)
- 4 tsb of water (add as much as your favorite consistency has been reached; you can also use the coconut water of that young coconut if you haven’t drunk it before like I did haha 😂)
- Dash of vanilla (optional)
Bend everything in a high speed blender until smooth. 〰️Toppings〰️
- Fresh figs from my neighbor’s garden
- Quinoa pops
- Almond butter

Starting to push past the Transitional changes and losses of this year, and push aside work to allow the holiday season in. For me that starts with baking. And I’m starting with this #healthyinspiration from one of my fav IGs @messylittlevegan . Check out her beautiful feed of healthy delish vegan treats. 💗👀👉RECIPE: Vegan Linzer Cookies
INGREDIENTS
2 cups flour
1/2 cup granulated cane sugar (I would sub out erythritol or coconut sugar)
1/3 cup vegan butter
1 tbsp Vanilla paste
1 tbsp soy milk (I would sub out Oat, cashew or almond milk)
1 tbsp Orange zest
1. Mix everything and knead into firm dough.
2. Chill in fridge for 30 minutes 
3. Roll out thinly and punch out circles. Half of the circles, punch out a little star in the middle.
4. Bake everything at gas mark 6 for 10 minutes
5. Let cool. Spread raspberry jam on whole cookie and sandwich a star cookie on top.
6. Sprinkle with confectioners sugar
Easy peasy and super delicious!

Creating my Caramel Slice recipe is gooey, sweet and the perfect bite-sized dessert! I'm happy to say my it was a success and proves very popular amongst taste samples to friends and family!! Find my recipe below

Ingredients for the oat layer

3 cups rolled oats 
1/4 tsp salt
1 tbsp cinnamon
3 tsp baking powder
1 banana
1 cup non-dairy or other milk
1/2 cup maple syrup (or other liquid sweetener)
1 tbsp vanilla extract

Method:
Preheat oven to 350F (180C). Line a square pan with baking paper or use a silicon mini square mould.
Mix the oats, salt, baking powder, cinnamon together in a, large bowl.
Mash the banana into a smaller bowl and add in the milk and syrup.
Add the wet ingredients to the dry ingredients, folding it through gently.
Pour mixture into a square silicon mould or a square baking pan and smooth out. 
Bake for 35-40 minutes until lightly golden brown.
Cool, then place in fridge while working on the caramel layer.

Ingredients for caramel layer:
1/2 cup almond butter
1/2 cup liquid sweetener (I used maple syrup)
1/2 cup coconut oil

Method
Heat all the ingredients over medium heat in a, small sauce pan. Once mixed and fully cooled, add over the oat layer and smooth out.
Store in fridge while working on the chocolate layer

Ingredients

1/2 cup maple syrup
1/2 cup coconut oil
2 tsp vanilla essence

Method:
Add all the ingredients to a small saucepan and bring to medium heat while stirring occasionally.
Leave to cool and then pour over caramel layer.
If using a square mould, pop out from the mould, or if using a baking pan, cut the slices once set. Store for up to a week in the fridge or longer in the freezer.

Roast Dutch carrots and green hemp pesto linguine 🌿 So much health in this pot! 
I simply whizzed up a pesto using the carrot tops i.e. leaves of an organic bunch of Dutch carrots with a handful of fresh parsley, one spring onion, 2-3 cloves garlic, 1/2 cup nutritional yeast, 1/2 cup hemp seeds, Celtic salt, pepper, 1/3 cup cold pressed organic extra virgin olive oil and 2 TBSP apple cider vinegar. Tossed through warm linguine cooked al-dente and topped with roasted Dutch carrots. Rather light and full of flavaaaa. .

I ate half of the entire cake and I have absolutely no regrets 😂 I hope you all have a wonderful rest of your day! Every birthday I'm reminded how lucky I am to be alive and thriving and I'm so grateful for everything I have in life! ‘Tis the Christmas season and treats are everywhere! It’s during this time of year when I notice the most that people will label foods as good or bad, or you hear people say they “fell off the wagon”, others are food shamed by friends, family or coworkers for enjoying a treat or people feel as though they lose all control with all the goodies around. ~ Well, I say it’s time to stop and put some happy, healthy food rules in place. 
Who’s with me? ~ 🛑🙋🏻~ 🍎

Food Rule #1: Look at food as fuel, and eat to nourish. If you eat mindfully and in moderation all foods can have a place in our lives. (And no, carbs aren’t bad!) ~ 🍎 •

Food Rule #2: No one is falling off of any wagon. Eating balanced and nourishing your body is about making long-term, healthy, lifestyle changes! No gimmicks, diets, or any crazy cayenne pepper juice cleanses! It’s all about balanced meals and practicing moderation. ~ 🍎 •

Food Rule #3: Never be ok with food shaming. (Yes it happens all the time!) “Hmmmm, hunny, should you really be eating that, aren’t you on a diet?  Well for starters, diets don’t work, and yes if you’ve made the decision to enjoy a piece of cheesecake then you should be able to do so without feeling guilty or  being questioned.  Everyone has the right to mindfully indulge. ~ 🍎 •

We forget that it’s not just about what you eat, it’s about how and why. Let go of that all-or-nothing approach to food and start focusing more on the small changes, habit formation and our relationship with food.  It’s the baby steps towards a healthier you that will lead to those big results. ❤️

Baked cacao oatmeal superfood muffins with walnuts & pomegranate seeds.  This recipe is adapted from a delicious recipe by @tofu_fit_guy & you all know I always change things up a bit.  These muffins would be great for breakfast (yes I did eat one as soon as they came out of the oven), but as an afternoon snack with a cup of tea on this chilly afternoon, these muffins are fantastic. ✨1 & 1/2 cups @bobsredmill organic oats, 1/2 cup @bobsredmill steel cut oats, 1/3 cup @salbachia chia seeds, 1/3 cup @nutiva hempseed, 2 tablespoons @omg_superfoods cacao powder, 1 generous teaspoon cinnamon, dusting of nutmeg, 1/4 cup @nutiva coconut sugar.  Mix all dry ingredients together.  2 tablespoons ground flaxseed, 6 tablespoons water, mix & refrigerate for 5 minutes then mix your flaxseed into 1 cup @foragerproject cashew milk (or any plant based milk of choice), 2 tablespoons maple syrup.  Pour wet ingredients into dry mixture.  I then added 1/3 cup chopped walnuts, 1/3 cup dark chocolate chips, pomegranate seeds. Here we have the coziest porridge ever, with not just cacao powder but real chocolate 😂😍
And Hazelnut butter for a nutella-like taste 😋

Base
~~~
Ingredients :
• Oats, 50g
• Almond milk, 200ml
• Raw cacao powder
• Dark chocolate (I used 85% - my favourite), 20g
~~~
Instructions :
Bring the milk to a boil, add the cacao powder, the oats and the chocolate. Stir well, then cut off the heat and cover. Let rest for 5 minutes.

Someone actually said this to me recently! 🙈 And I had to laugh a little (inside) because pre-graves disease I was totally the person who would say and believe that 😅. Into parfaits? Heck yes! Have a penchant for chocolate? We've got that over here in healthy foodie town. 🍫🍨🍰💖 •

A healthy diet is not about deprivation. Not at all. If you feel deprived you won't be creating a sustainable lifestyle. Do some research, find recipes for healthy versions of your favourite things. And take your time. You don't have to go from 0 to 50. One step at a time and you'll get there. But don't let silly doubts like this keep you from trying. I wish I hadn't! •

This one has frozen banana, frozen mango, chia seeds, flaxseeds, baby spinach, @drinkbruce hazelnut milk, @amazoniaco cacao/coconut protein powder, filtered water and a huge helping of good times thrown into it 🙌🏻🙌🏻🙌🏻 which all makes it the perfect hot summer morning smoothie to drink while dripping with sweat (the ugly kind, not the model kind you see in commercials) after working out. 
And I know we've all been there.

New week means new granola baking 🤗 Here is a cozy, crunchy and tasty recipe. It’s so comforting during cold winter days ❄️

Recipe:
* 2 cups GF rolled oats
* 1 cup chopped cashews
* 1/2 cup chopped macadamia nuts
* 1/2 cup cranberries
* 1/2 cup coconut flakes
* Pinch of kosher salt
* 3 tbsp maple syrup
* 2 tbsp olive oil (or coconut oil)
* 1 tsp vanilla extract
Preheat oven to 150°C (300°F). In a mixing bowl, combine all dry ingredients (except cranberries and coconut flakes). In a small bowl add maple syrup, olive oil and vanilla. Whisk until combined. Pour liquid over dry ingredients and stir until completely coated. Pour the mixture evenly onto a parchment lined baking sheet. Bake for 10 minutes, then sprinkle with coconut flakes, stir and spread back to an even layer. Return to the oven for 10 more minutes. Let it cool, then combine with the dried cranberries. Enjoy 😉

Las hamburguesas son las de @vegadona de berenjena que me quedaban por probar, están muy ricas, pero bastante saladas ¿a vosotras que os parece ?
Las patatas son al vapor (en el micro) con aceite y pimientón.
La salsa está hecha con tofu, aceite, sal y pepinillo todo triturado.
¿Qué os parece?.

Recipe: Mix together 125g caster sugar, 10 tbsp aquafaba, 30g cocoa powder, 115g self raising flower and 3 tbsp soya butter until smooth. 
Bake on a greased baking parchment in a Swiss roll tin for 8-10 minutes at 170c. The sponge needs to be firm but springy. Leave to cool with a damp tea towel on top of it.
For the creamy filling whisk a tin/carton of chilled coconut cream until it roughly doubles in size and thickens. 
Spread evenly over the sponge and carefully roll up. You may not need to use all of this depending on how creamy you'd like it. 
Next make the chocolatey butter cream topping. Mix together 75g melted dark vegan chocolate, 75g soft soya butter and 150g icing sugar and coat the sponge.

Pumpkin oatmeal waffles two ways 🤤 with strawberries, raspberries, blueberries and coconut cream 😍 or caramelized peaches, homemade granola and chocolate fudge 🍫 which one would you pick? I chose the one with chocolate 😛 but my girlfriend decided to devour the one with berries 😂 The most delicious waffles, crispy outside and very fluffy inside... I think I'm addicted to these waffles, I've eaten like 6 😅

Waffles de calabza y avena 🤤 de dos formas diferentes, con frutillas, frambuesas, arándanos y crema de coco 😍 o con duraznos caramelizados, granola casera y fudge de chocolate 🍫 cuál comerias? Yo elegí la que tenía chocolate 😛 pero mi novia decidió devorar el que tiene bayas 😂 Estos son los waffles más deliciosos, crujientes por fuera y muy esponjosos por dentro ... creo que ya soy adicto, he comido como 6 😅
