Once I share this recipe, I will have basically nothing left to give. But I have seen far too many sad, undercooked, soggy looking roasted potatoes on Instagram recently and YOU ALL NEED HELP!!! I know this pic isn’t ideal... but seriously this felt like a #PotatoEmergency#PleaseStopUndercookingYourTatos
-Russet Potatoes (however many you like, but always go for more than you think!) - you can use any kind of potatoes but these are my favorite.
-1-2 tbsp bacon fat (or other fat if you don’t have)
-2-3 cloves of garlic -Salt, Pepper, Rosemary .
-Preheat oven to 425
-Cut potatoes into chunks of any size. The smaller they are, the crispier they’ll be and the larger ones will be fluffy in the center. I like to do a mixture of sizes
-Put potato chunks into a large pot and cover with cold water and approx 1-2tbsp of salt
-Boil the water on the stove, once it reaches a rolling boil check the potatoes with a fork to see if they’re tender. Be careful not to overcook them, or you have a happy accident I call “mashed potatoes!” -Strain the potatoes in a colander and shake them dry a bit
-Put potatoes back into pot (which will still be warm) and add the fat, pressed garlic cloves, salt, pepper and rosemary
-Put the lid on the pot and shake it all around so that each potato is covered in goodness
-Spread onto a baking sheet (with parchment or my favorite silicon baking sheets!)
-Check after 45 minutes and see if it’s your desired level of crisp, but sometimes I’ll leave in for a full hour

Different season, same drink 🙌🏼 @rebbl Is an amazing company doing amazing things and they’re doing a #challenge so, why not share my #REBBLrevelation : *A year ago I found out I’m allergic to... literally everything (corn, potato, tomato, and peanuts). I did an elimination diet (got rid of dairy, gluten, soy.. on top of the listed allergen). *I was so overwhelmed and did not think many products (if any) were going to be suitable for my needs. *Last year I discovered REBBL and it was a god-send! (✨Local peeps- you can find their flavors at Healthy Living and Four Seasons.. I’m sure there are other places as well) *Favorite flavors: Matcha Latte, Maca cold-brew (and Reshi cold-brew) and Chocolate protein (dark chocolate and reshi)
Carrot and banana loaf 🍌 🥕 You can't beat a bit of mid-week baking, especially when the recipe is as easy as this! All vegan and allergen free ✌🏻 ☕️
1. Preheat the oven to 180c / gas mark 4
2. Blitz 230g oats in a food processor until flour-like in consistency
3. In a mixing bowl mix your homemade oat flour with 1 teaspoon bicarb, 1 teaspoon baking powder and 200g coconut sugar
4. Mash 2 bananas and grate 100g carrot and mix in with the dry ingredients
5. Add 50ml of oat milk and 50ml melted coconut oil to the mix
6. Grease a loaf tin with coconut oil
7. Add the batter to the tin and bake for 35 mins

Salmon with a parsley and lemon gremolata, served with rice, and my fave veggies broccoli and cavolo nero 💪🏻
Recipe serves 2
1. Blitz together 50g wheat and gluten free breadcrumbs, a large handful of parsley, the zest of 1 lemon and a glug of rapeseed oil
2. Sprinkle a thick layer over 2 salmon fillets
3. Bake in the oven for 15-20 mins at 180c or gas mark 4
4. Serve with long grain rice and some super greens

Allergen free trifle 😍😍😍
Going through a period of reducing egg, dairy, sugar and grain consumption? Try out this super tasty trifle treat! 🙌
With a base of coconut flour, flax, chia and coconut cream rolled like a sponge cake with strawberry chia jam in the centre. A layer of raspberries with lime jelly and a second layer of lemongrass and rhubard jelly. A layer of mango chia pudding topped with pumpkin caramel sauce and whipped coconut cream.
1 cup coconut flour
2 Tbsp chia
1 tin coconut cream (approx 350ml)
3 Tbsp whole flax seed
1tsp aluminium & gluten free baking powder
Blend 1 cup strawberries with 2 Tbsp chia and 1 tsp Stevia
1) combine all base ingredients in a food processor
2) roll/ press out base to a flat rectangle shape
3) spread with chia jam
4) roll the base length ways to form a long scroll
5) cook at 160 degrees C for 60 mins
6) allow to cool before slicing into small scroll like pieces and placing over the base of your dish
Combine 3 Tbsp grass fed gelatin powder (or 1Tbsp agar agar for vegan/vego) with 2 cups boiling water and flavouring of choice e.g. juice of one lemon, lemongrass, mango. Stir through fresh or frozen fruit & pour over the base.
Combine one tin of coconut cream with 5 Tbsp chia and a diced mango. Pour over your jelly layer once set.
Pumpkin caramel sauce:
Combine 300g steamed pumpkin with 1Tbsp maca powder, 1/2 tsp sea salt, 1tsp cinnamon, 30g macadamias and 1Tbsp Stevia. Pour over the chia layer once thickened.
Whipped coconut cream:
Place 2 tins coconut cream in the fridge over night, careful not the shake. Remove from fridge and tip out the watery component. Place your beaters and mixing bowel in the fridge also before whipping your coconut cream.
Cover your trifle in your freshly whipped cream and a sprinkling and cherries 😍😍😍🍒🍒🍒

A late start to my meal prep because we had a snow day today and are having another tomorrow but here it is....”Stir Fry” Noodles with @btequator Spicy Seed Sauce! It’s the business for real. I cooked carrots and red bell pepper in a pan in @btequator sriracha chia oil then added in zoodles and cooked @eatbanza pasta. I separated into my individual dishes then topped with the special sauce, green onion and sesame seeds. Don’t forget the avocado on the side!
Asian Seed Sauce
2 cloves of garlic chopped
2 tablespoons @btequator sriracha chia oil
1 tablespoon @btequator 5 seed butter
2 tablespoons @yellowbirdsauce blue agave sriracha
1/2 tablespoon honey
1 tablespoon lime juice
Heat up garlic in sauce pan with oil then add the remainder ingredients...try not to eat it all with a spoon...

🥨🥜🧀 PANTRY MAKEOVER CHALLENGE 🍞🍋🥖 I used to buy imitation vanilla. Not only is pure extract better for you, but it can be so strong, you don't need to use as much (justifying the extra cost). I'm going to tell you how you can make your own:
Start with a quarter pound of vanilla beans, and cut them each in half lengthwise, and then make another incision down the middle of each half (without cutting all the way through). Put them in a jar, completely cover the beans with clear vodka, and wait 2-4 weeks. You can filter it out or leave the beans in there and keep using it for a stronger vanilla flavor each time.
You can also use a darker spirit like aged rum; however, the rum flavor is incredibly strong. You *will* taste it in your baking. For some, that's a plus! 🤣

Pork ragu with a side salad of superfood spinach, cucumber, and leftover tabbouleh 🍝🥗
Ragu: Recipe serves 4
1. Finely chop 2 carrots and 1 onion, and sweat in a pan on a low heat
2. Roughly chop about 1kg of tomatoes. When the onion and carrot is soft, add the tomatoes to the pan
3. In a non stick frying pan, add 500g pork mince to the pan cold. Heat the pan and cook the mince until browned
4. Add the browned mince to the pan of tomatoes carrots and onions
5. Serve with pasta, gluten free if required 🤗
For the tabbouleh: serves 4 as a side dish
1. Very finely dice 1/4 red onion and 1 large tomatoe
2. Chop a large bunch of parsley, 50g approx
3. Mix together the parsley, red onion and tomato
4. Stir in the juice of 1 lemon and some salt and pepper
