So my first born turns 16 today. Milestone reached with mixed feelings. I can still see his baby face in the man he becomes. As I sit and watch his baby movies it makes me remember to live every precious moment with them, treat each day like it counts double, and for the bad days just breathe and vow to do better tomorrow. #testkitchen day and right now my new favorite sandwich. There's a lot going on here. Starts with #Koji cured #berkshire Boston butt. Slow-smoked & finished over wood.
Decided to do our twist on a North Carolina inspired motuarde sauce. #Moutarde you say?, yep. It started with a really nice imported spicy Dijon finished with horseradish juice and some house made whole grain mustard. We finished it with a little white wine and steeped the pork in the sauce. Served on a toasted steamed bun made with Koji flour, topped with house-made dills, onion kraut, and koji yellow kimchi. Served with a side of purple mustard seed Cabernet kraut.
The #umami from the pork + the delicate sweetness of the steamed bun + the light acidity and heat from the moutarde and kimchi was a real balance of sweet and savory.

Courgetti is a ridiculously quick and easy spaghetti replacement 🍝 and I much prefer it to ‘Shiritaki’ or ‘Slim’ noodles (in texture, taste AND price!) All it takes is 1/2-1 courgette and some quick turns on the spiraliser and you have yourself courgetti. Don’t have a spiraliser? Use a potato peeler & make ribbons. Sometimes I put it in a pan with water and take it off as soon as the water comes to the boil - sometimes I add it directly to what I’m cooking in a pan, sometimes I eat it raw in a salad (try it!) and sometimes I just microwave it for a minute. Here it’s topped with sausage, onion, pepper, tomatoes and cheese. So good👌🏼
Have a food allergy? On a certain diet? Can’t have wheat? Gluten sensitive? Celiac? No sugar? Diabetic? Can’t have grains? Nut allergy? VEGAN? Soy allergy? PALEO? No eggs? No dairy?? Whatever it is I’ve heard it before and yes you can still enjoy REAL food and REAL desserts.

This is a good back up meal if your fridge is looking a bit bare! Salmon (which was bought frozen) with broccoli, kale and brussel sprouts.... because my fridge ALWAYS contains some sort of green veg. I added mayo and pesto 👌🏼

Easiest appetizer ever? Pretty much. Also one of the most popular recipes on the site! My Artichoke Hummus = throw everything in a food processor and whiz. The end. No legumes or seeds were harmed in the making of this dip! 🙅🏻♀️(For the record, in a former life I was probably comprised of 82% hummus and pita at any given moment.)

|| GELATIN GUMMIMES || So these are basically glorified Jello squares, but they’re so fun and they make eating gelatin on a regular basis so easy! They’re also SUPES EAZY to make. Which i likey 😎 When consumed regularly, gelatin can improve gut digestion and health, and relieve joint pain, among a host of other things!
Directions: heat 1 C juice of your choice (I used blueberry pomegranate), in a small sauce pan over low heat, stirring gently. Just as it starts simmering around the edges, remove from heat, and add 1tbsp grassfed gelatin (I used @greatlakesgelatin) and 1tbsp sweetener (I used raw honey). Once the gelatin and the sweetener are dissolved, pour the mixture into a small rectangular/square dish and cover it with foil/cling wrap/whatever. Let it cool in the fridge until the gelatin becomes hard, and then using a sharp knife, cut the gelatin into whatever shape you want! Boom, done!

Started rehydrating & finished the miso process with #Koji and housemaid coconut aminos + our chickpea miso. The flavor profile is very interesting, complex deep with a very layered #umami flavor.
