These pancakes are gluten-free and diabetic-friendly. I made the cinnamon swirl pancakes several posts back and they were very good! This time I wanted to experiment with combining chocolate chip with cinnamon swirl for an interesting flavor combination! This was super fun to make 😍Three of my favorite wheat flour substitutes 👉Tigernut flour - almond flour - coconut flour make up the pancake mix. Just got back from the Houston Pecan Company, it's a gem of a source for nuts and dried fruits. Founded in 1942, with employees working there for many years - they can answer just about any question you might have! I can trust that everything will be fresh and sourced from only the best suppliers. Their pecans are fabulous! Look for these items in baked goods coming this week!

Almost classic STRAWBERRY RHUBARB PIE (with einkorn-almond flour, grass-fed butter crust and non-refined sugar filling)
Messy as the lattice is on this crust, it is flaky AF 😜and melt-in-your-mouth. It's not #glutenfree but is made more nutrient-dense by using @jovialfoods einkorn flour and almond flour (I suspect it can be made with a #gf all purpose flour mix too)
The killer in this pie is freshly picked local strawberries. Now those babies are at their absolute highest phyto-nutrient content so the plan is to pack those into anything I can (my family just invaded a local organic farm and picked over 30lb of those bad boys) Since the naturally growing strawberries are small and sweet on their own, I was able to use less sugar and also to half them (easy prep) so that filling holds better shape.
It was a very hot day which is a hard day to work with pâté brisée. If you find yourself in the situation of too soft sticky dough, refrigerate between stages of making until it firms up as often as you need to
2 cups einkorn flour (or AP)
1/2 cup fine almond flour
8 oz cold butter
8 TBSP iced water (if you are not making this for kids, replace 1/2 of the water with vodka. I swear it's NOT a Russian trick lol. Just something I read and it really helps to relax the gluten for a fool-proof flaky crust)
Optional: 2 TBSP coconut sugar
Egg wash (whip 1 egg with 1 TBSP water)
Sugar for sprinkling the top (optional but recommended)
5-6 cups of mixed chopped strawberries and rhubarb cut in 1/2 inch chunks)
1/3-3/4 cup coconut sugar or any unrefined sugar of choice (muscovado or sucanat would work too). I used 1/3 cup bc the strawberries were super sweet. We loved the final result. But adjust according to your family preference and strawb sweetness)
3 TBSP tapioca flour
1 tsp. freshly grated lemon zest

You guys have to try these low carb bagels I made the other day. They're only 6 carbs per bagel. I got the recipe off Pinterest. You can add lots of the things to them to make them different flavors like garlic salt, everything seasoning, or cinnamon and stevia.
1 1/2 cup almond flour
1 tbsp baking powder
2 1/2 cup mozzarella cheese
2 oz cream cheese
2 large eggs
Preheat oven to 400 degrees.
Combine almond flour and baking powder.
Combine mozzarella and cream cheese and microwave for 2 minutes stirring halfway.
Combine both mixtures and eggs and knead with your hands.
Divide into 8 parts and roll to form logs and put ends together to form a circle.
Bake 10-14 minutes.
Here's a gluten-free, refined sugar-free, and dairy-free chocolate cake I baked for my bf's brother's birthday a while back! 🍫🍰🎉 The cake actually has two layers and has a homemade chocolate glaze in the middle and on top! 🤗 I get so inspired when I find bakers who use real, clean, simple ingredients. 💯👌🏼This cake was inspired by @sweetlaurelbakery 😊
First time cooking in a couple days. Made almond flour crusted coconut shrimp. Threw it on a salad with pineapple walnuts and avocado drizzled a little homemade ranch and it was delicious!! The crust on the shrimp came out perfect too. Didn't even miss regular flour.
