Fricken Mondays man 😅 Trust me, I LOVE Mondays, but that doesn't mean they're not a doozy! My Mondays are always jam-packed, but today was even more-so than usual. If you saw my stories I didn't even have time to get in my Monday workout, but I'm so so thankful I'm in a place where I'm 100% okay with switching things up and taking unexpected rest days. I still may not be the most "go with the flow" person, but I'm making baby steps and that's something I'm proud of 🤗 Although I truly believe it's about MAKING time not having time, some days simply don't have enough hours in the day 🤷🏼♀️ And guess what!? That's okay!! Instead of trying to squeeze in a workout, I'm laying on my floor, half brain-dead from studying, thanking the lord I found one more of my paleo delicata muffins hidden in the back of my freezer to munch on for dessert 🙌🏼💃🏼 It's the little things amiright? Tüm malzemeleri hamur kıvamına gelene kadar karıştırıyoruz. Yağlı kağıt serdiğimiz fırın tepsisine 1er yemek kaşığı hamurdan alıp cookie şeklini verip yerleştiriyoruz (ben 15 tane çıkardım). 170 derecede önceden ısıttığımız fırında 12-15 dk pişiriyoruz. Ve muhteşem kokusuyla hazırr♨️

Mostly, I maintain a healthy lifestyle and try to stay away from all the ‘bad things’ like sugar and gluten. So you can imagine how happy I am to find cafés such as @farmgirlcafe. This doughnut is made of almond flour and applesauce. It might not be very sweet but I really liked my afternoon treat. Side Note: I am always grateful when food is not fried except french fries because everyone (even the healthiest, greenest one’s) love french fries!

3 cups almond flour or ground almonds
1/2 tsp sea salt
1/4 tsp cinnamon
1/2 cup coconut oil, melted
1/2 cup maple syrup
1 Tbsp pure vanilla extract
For the topping:
1/4 cup coconut sugar
2 tsp cinnamon
Preheat oven to 130C/350F and set rack in the middle of the oven. Prepare a baking sheet by lining with parchment paper.
In a small bowl, whisk together the topping ingredients. Set aside.
Stir together the dry ingredients in a medium bowl. Add the coconut oil, maple syrup and vanilla extract.
Place one- to two inch balls of batter onto greased and parchment lined baking sheets and lightly press down.
Sprinkle with topping mixture. Bake for 8-10 minutes, until just golden brown around the edges. Remove from the oven and place the biscuits on a cooling rack. How do you start your weekend? 🤣🥞 @timothy.lucas and I are kicking it off with some Quinoa Almond Pancakes topped with @halotopcreamery & @lakantosweetener Maple Syrup. .
•2 flax eggs (2 tablespoons flaxseed meal+ 6 tablespoons water) •1 cup quinoa flour (I like to toast mine) •1/2 cup almond flour •2 tablespoons arrowroot starch •2 teaspoons coconut flour
•2 teaspoons baking powder
•1/2 teaspoon sea salt •1 1/4 cup non-dairy milk •3 tablespoons almond oil (or other light flavored oil) •Halo Top Ice Cream 🍦 Dairy Free
•Preheat a griddle over medium heat.
•Whisk together the flax and water and set aside to gel.
•In a large mixing bowl, whisk together the flours, baking powder and salt.
•Beat together the flax eggs, milk, oil and syrup then pour into the dry and mix until a smooth batter forms. •Lightly grease your griddle with nonstick cooking spray or coconut oil. Ladle ¼ cup of batter onto the griddle and repeat until you have filled your pan. Cook the pancakes until small bubbles begin to form around the edges, about 2 – 3 minutes. Flip and cook for another 1 – 2 minutes longer until the other sides are golden brown. Repeat until no batter remains.
•Serve warm with Halo Top Dairy Free ice cream & Lakanto maple syrup

Today we experimented with almond extract in the cookies in two different recipes. For Science!!! Grinding our own hazelnuts did not go well, so my same ol' almond flour recipe won out. Tip 1- read ALL the directions before you start. Tip 2- when grinding nuts, don't over process. I am going to keep buying pre-ground.
