Anti-Inflammatory Sweet Potato & Kale Curry🌱

I batch cooked this recipe to have it for a few meals this week, adding the protein with each meal to switch it up (garden veggie tempeh pictured here). It was delicious! Recipe below:
.
1 tbsp coconut oil
1 yellow onion, sliced 
2 cloves garlic, minced 
2-3 carrots, chopped 
1 sweet potato, cubed 
1 cup water 
1 can coconut milk 
2 tbsp curry powder 
1 tbsp cumin 
1 tbsp turmeric 
1 bunch of dino kale, chopped 
salt & pepper . 
Over medium heat, add olive oil to deep pan with lid (I used my Dutch oven). SautΓ© onion for 3-4 minutes. Add garlic and stirring occasionally for 2-3 minutes. Add carrots and sweet potato and sautΓ© for 5 minutes, continuing to stir occasionally. Add water, coconut milk, and spices. Bring to a boil and then down to a simmer for 5 more minutes with lid on. Add kale, salt and pepper and stir. Cook until kale is slightly wilted. Remove from heat and serve with your favorite protein and grain! .
Note: You can totally add chicken, beef or chickpeas to the recipe to cook in the curry juices! I decided to omit the protein and pair while serving to add variety to the meal. .

I learned how to make pesto in 9th grade and I've been hooked every since. Basil pesto on linguine was my go-to dish for dinners the night before swim meets, my comfort food in college and has now become a weeknight staple in our house. My son eats it up!

🌱My recipe has evolved a bit -- instead of limiting myself to basil and pine nuts, I like to use arugula, kale, spinach or whatever is on hand. I also switch up the nuts and include walnuts, pumpkin seeds (oh, hey selenium!), and hemp seeds (great source of plant-based protein). Add a squeeze of lemon, 1-2 fresh garlic cloves, a couple glugs of EVOO, and some salt and pepper. You can even add a tbsp of miso for probiotics and umami flavor. Whirl in the blender or food processor and you have a delicious, nutrient dense sauce or spread! .
