Dinner time! Delicious ramen. Turned out sooo yummy. We were feeling a bit under the weather, so I made this amazing broth which brought us back to life. I didn't have all the Asian ingredients and I can't eat spicy food, so this is my version:
Heat oil in a large pot, add 2 tsp of minced ginger and 3 tsp of minced garlic (I had previously soaked them in soy sauce) and cook until softened. Add 3 Tbsp of soy sauce and stir for a minute. Add vegetable stock (I had made some before), cover, and bring to boil. Let simmer. Add cabagge, cooked chicken, and ramen noodles (cook according to package). Serve with boiled eggs, sesame seeds and you're done!
¡A cenar! Un ramen delicioso. Salió taaaan rico. Como hemos estado medio malillos hice este caldo que nos devolvió la vida. No tenía todos los ingredientes asiáticos y no puedo comer picante, así que esta es mi versión:
Calentar el aceite en un caldero grande, añadir 2 cucharaditas de jengibre rallado, 3 de ajo rallado (yo los tenía en salsa de soja) y cocinar hasta que ablanden. Añadir 3 cucharadas soperas de salsa de soja y revolver 1 minuto. Añadir caldo de verduras (yo tenía hecho de antes), tapar y dejar que hierva. Bajar el fuego. Añadir col, pollo ya cocinado y noodles ramen (cocinar según paquete). Servir con huevo duro, semillas de sésamo y ¡listo!
Din din. Ok where do I start? Heartier than last nights soup cause I need some substance in me.. Vegetable broth, sliced ginger, mint leaves, rice noodles, carrots, celery, mini corns, bok choy, organic black oyster mushrooms, curly parsley, broccoli, pork and shrimp dumplings topped with a whole Thai chili pepper. This is going to be my goto food this winter. Acting as a throat clearing and hot spa treatment...loving this soup. Round stomach syndrome tho. 😆 Dessert: Golden berries. Although now that I think about it should of covered them with chocolate and caramel drizzle in the fridge for 20. Serious dinner the night! A lot of preparation but really nice! The soup was Exotic Mushroom Laksa, and mushroom and saffron rice. Both of these are Slimming world recipes. I exchanged the laksa paste for red curry paste to keep it vegan friendly. We also had samosas and bajis on the side with some Bombay Potatoes. The soup was almost an alternative to Tom yam soup which I miss. I wish there was a replacement for fish sauce, I miss that. I'll post recipes in pics.

Tonight’s dinner was a visit to St. Petersburg’s unique little restaurant located down Central Avenue called @alesia_restaurant 😊 I had beef stew filled with tender beef, carrots, herbs, and rice vermicelli (rice noodles) as my main dish and for a starter I shared a delicious and sweet plate called the honeycomb plate which contains blue cheese, grapes, bread, and a honeycomb!
