Disclaimer: prepared with butter so no this isn't completely vegan but I'm on the path to mental strength to de-program how I'm accustomed to cooking and eating. It's exciting really!! Not my first time going this route but it is not just a diet .. it's a mentality.
Green!! I love my spinach so I prepare it two ways raw salad and sautéed with onion (looking into vegan butter feel free to suggest). Must haves for my salad #avocado and #tomato#spinach is now a household staple here. Quinoa is a great source of protein I pan seared this with kale, brown rice, and garlic.

A few ingredients for the this coconut bread, adding zaatar helps with "the eggy side" of coconut bread. Also, using avocado oil breaks the coconut taste while better matching with the zaatar. Loved all the @biopret products 🍃💚
Coconut zaatar bread:
3/4 cup @biopret coconut flour
1/4 @biopret cup coconut oil
1/4 cup avocado oil
1/2 tsp psyllium husk or 1 tbsp group flax seeds
1/4 cup water
2 tbsps zaatar
1 1/2 tsp baking soda
1 tbsp acv
5 drops vanilla extract
1/2 tsp salt
Separate the eggs in two different bowls. Beat the whites with the salt till foamy. Beat the yolks with the oils, acv and vanilla. Blend the husk with the water (used an aerolatte mixer) add to yolks. Then add flour,zaatar and baking soda to the yolks. Mix, then fold in the whites. Grease tin with avo oil, transfer batter and sprinkle with more zaatar or seeds. Bake at 190C for 35-40 min (or until toothpick comes out clean). Let cool completely before cutting. Store in fridge or dry place.
Porque my on again off again vegetarian diet is no longer a diet at all. I'm discovering being #vegan is not about diet at all for me. It's about choices, mental strength more than anything. I CHOOSE not to consume my spirit, my body with things I KNOW are toxic. We consume death and wonder why we feel depressed with zero energy .. have no life in us and we're eating microwaved processed crap with no nutritional value. @iamsheforeal that moment when you see someone tell you .. you are awake so live accordingly! I give thanks 🙏🏾 to my sista queen for speaking into that consciousness and awakening that truth!! You really are what you eat. So I choose to eat LiFe, energy!
