🥑My Fave Guacamole🍅 I thought I loved guacamole until I ate this. A girl at work introduced me to the best ever guac 🌞 All the elements of guac except it's diced instead of smashed. It's deceptively simple but there's something about this that makes it magic. Whenever I take this somewhere it disappears in a jiffy. Like, really fast. No matter how huge a bowl there is🍃 There isn't a recipe, just a list of ingredients: •1or 2 or 6 avocados (depending on how hungry you are) diced
•an equal amount of seeded tomatoes, diced.
•lots of green onions, white and green parts, thinly sliced
•a big fist full of chopped cilantro. •chilli pepper flakes •salt to taste •just enough lime juice not to overpower the other stuff
•maybe a little cumin if you're in the mood
Gently mix together. Serve with chips, wrapped in a tortilla, or eat directly from bowl with a spooon😉 Chase with beer, margarita, boozy lemonade, or whatever else tickles your fancy🍺

This super simple salad (say that five times fast lol) is easy to make and is perfect to pack for lunches! Combine romaine lettuce, avocado, cucumber, feta, tomatoes and the juice of half of a lemon together and enjoy!😋
Just finished off this dinner and it was soOo good and filling and took 10 minutes to throw together 🥗 Its a bed of greens with ACV, avocado, sliced turkey, roasted broccoli, roasted sweet potatoes and beets, and a California veggie burger all topped with the tahini/lemon/maple syrup dressing I use for everything 💁🏼 Going on a bike ride tonight to catch the sunset 🌅🚴🏼♀️ Hope you guys have a good night!
It was Cuban night in our household today 🇨🇺 I actually planned ahead for once and soaked some dried black beans yesterday, so I could make them from scratch today, so much better than the canned version! Pour them over some rice and you have a meal in and of itself right there. I also made vaca frita de pollo (shredded chicken marinated in a citrus mojo sauce and stir fried with white onions). I cheated on the plantains and bought some already made, but I did top them with a freshly made tangy garlic sauce. They were almost as good as the real thing. Finally, serve with a side of fresh avocado. It was such a delicious and filling meal, but oh you should see the mess in our kitchen 😬

Had a crazy day running around then visiting with family. Threw this together for a last minute easy meal to end our day. This is honestly my go 👏🏼 to 👏🏼 meal 👏🏼 especially on my busy days.
All I do is throw together any veggies I have in my fridge (I did red potatoes, asparagus, jalapeño, tomato, purple carrot, orange bell pepper, and spinach) stir fry them up with a little minced garlic, s&p, and rosemary and top with some good fats (avo) and a little protein (egg). This is honestly so easy and delicious to do on those busy days when you can't think of anything fancy to make 🙌🏼
