【Avocado sesame steamed bun】酪梨芝麻饅頭
I try a new style and new flavor combination this time. This idea comes from a light clay accessories that I bought them from a traditional art market many years ago. It was a pair of lemon-wedge like clip earrings. I loved it so much but soon I lost one while traveling back home. 😢I was crazy to write an email back to ask for the other immediately when I got home. Luckily, that light clay artist was nice to help me. Now, I have got my ear piercings and even don't know where those earrings go. Haha. I just smile for my funny past memory.
Salmon Sushi Bowl + #AvocadoBun Burger dinner and @stollerwine Pinot vibes. This is basically an ode to @machacafemilano — the cafe I can’t stop day dreaming about and what inspired this meal 😌 .
For the Salmon Sushi Bowls
1-1 1/2 pounds wild-caught salmon, sushi grade
1 avocado, sliced
1 cucumber, sliced
1 cup edamame
1/4 cup pickled ginger
3 green onion, sliced
bonito flakes, to taste
4 sheets nori, cut into strips
sesame seeds for garnish
Chili oil (I used @hotmamasalsapdx)
For the Sushi Rice
2 cups short grain white sushi rice
3 cups Water
2 tablespoons rice vinegar
1 tablespoon coconut aminos (or 1 tbsp sugar)
1/2 tablespoon sea salt
Prepare Sushi Rice. Rinse the rice until water runs clear. Add to water in a medium pan, stirring a few times until water comes to a boil. Cover and reduce heat to low. Cook for about 20 minutes, or until water has evaporated. Allow rice to cool slightly. In a small bowl, mix the rice vinegar, coconut aminos or sugar and salt. Heat in the microwave for about 30 seconds, then stir until sugar and salt are dissolved. Pour vinegar mixture over the rice and stir until combined. .
To assemble Salmon Sushi Bowls, add sushi rice to the bowl. Top with a portion of sliced salmon, avocado, cucumber slices, green onion slices, edamame, pickled ginger, and a few pieces of nori. Drizzle with chili oil. Garnish with sesame seeds and bonito flakes if desired. Recipe makes 4. It's my first try of sourdough(starter). It takes 24 hours to develop a complete fermentation. Full bodied aroma of liquor is wafted up from a dough container when I remove the cling wrap on it. Mmmmm.
