Salmon Sushi Bowl + #AvocadoBun Burger dinner and @stollerwine Pinot vibes. This is basically an ode to @machacafemilano — the cafe I can’t stop day dreaming about and what inspired this meal 😌 .
For the Salmon Sushi Bowls
1-1 1/2 pounds wild-caught salmon, sushi grade
1 avocado, sliced
1 cucumber, sliced
1 cup edamame
1/4 cup pickled ginger
3 green onion, sliced
bonito flakes, to taste
4 sheets nori, cut into strips
sesame seeds for garnish
Chili oil (I used @hotmamasalsapdx)
For the Sushi Rice
2 cups short grain white sushi rice
3 cups Water
2 tablespoons rice vinegar
1 tablespoon coconut aminos (or 1 tbsp sugar)
1/2 tablespoon sea salt
Prepare Sushi Rice. Rinse the rice until water runs clear. Add to water in a medium pan, stirring a few times until water comes to a boil. Cover and reduce heat to low. Cook for about 20 minutes, or until water has evaporated. Allow rice to cool slightly. In a small bowl, mix the rice vinegar, coconut aminos or sugar and salt. Heat in the microwave for about 30 seconds, then stir until sugar and salt are dissolved. Pour vinegar mixture over the rice and stir until combined. .
To assemble Salmon Sushi Bowls, add sushi rice to the bowl. Top with a portion of sliced salmon, avocado, cucumber slices, green onion slices, edamame, pickled ginger, and a few pieces of nori. Drizzle with chili oil. Garnish with sesame seeds and bonito flakes if desired. Recipe makes 4. It's my first try of sourdough(starter). It takes 24 hours to develop a complete fermentation. Full bodied aroma of liquor is wafted up from a dough container when I remove the cling wrap on it. Mmmmm.

It's simply a lack in patience and def. a lack in technique.
In order to keep the most beautiful shape, many foodies remove the pit/stone from an avocado by inserting a knife into it.
A few days ago I got seriously injured while I pitted my avocado with a knife.
I needed treatment and the narcotist told me about a scientific medical article titled: 'Avocado trauma', he read the other day.
His wife had difficulties believing that such a thing would exist, so he told.
He now had trouble believing that he was dealing with a serious blogger/foodie with avocado trauma on such a short notice.
I mean this is weird right?
Avocado trauma is something that is most common with food bloggers & foodies. ( I know it sounds funny 😉) The thing is,
I want to let you know this... Never ever pit your avo with a knife. Use a spoon instead.
Everything has gone well and I'll start rehabilitation / movement therapy on Monday. I take my rest now and therefore perhaps I will not respond to all your comments but I'll read it for sure!
