Sometimes lunch is as simple as a slice of Ezekial Bread in the toaster, topped with baked beans & pickles, served with yesterday's coleslaw. I was too busy watching college football (and four kids under four) to cook anything today! 😜🏈👦🏼👧🏻👶🏻👶🏼

In keeping with my Meatless Monday commitment (and now lifestyle) I ventured into hot breakfast territory with these British Baked Beans- they're less sugary, more tomatoey than their American cousins.
I won't lie to you, I did have this for 'brinner' (breakfast dinner) too one winters evening infront of the heater. I added two eggs about 10 minutes before the end of the cooking time- soooo delicious!

This is my vegan barbecue plate from @the_velvet_pig last night! This is seriously the best dinner I have ever had. If I could eat this ever night life would almost be complete! Portobello mushroom brisket with homemade BBQ sauce, potato salad, baked beans, & fresh slaw combined together make the perfect vegan BBQ plate! I couldn’t resist trying the Purple Piggy Sandwich (US$9) from Rolling Smoke Bar-b-que’s food truck at the Mountain Heritage Arts & Crafts Festival yesterday. The tender pulled pork had a lovely smoky flavour while the tangy purple mango slaw helped to cut through the richness of the pork. The buns were soft and had absorbed the jus of the meat. Don’t miss the sides (US$4 for a small portion)! I tried the Smoked Mac & Cheese and the Baked Beans that weren’t out of a can but had meat, maple syrup and BBQ sauce. Though I’ve never been a fan of baked beans (scarred for life by canned beans), these were excellently smoky and a game changer. The same smokiness extended to the sufficiently cheesy Mac & Cheese that was addictive without being too heavy on the stomach. There was a fairly long line for this food truck.
