I had a great time this weekend trying out new recipes with my girls, especially since @veronicasmu had a bunch of pumpkin purée left over from Thanksgiving. This pumpkin loaf is perfect for the holidays and almost guilt free and super easy to make! 🙏🏻. Ingredients: •1/3 cup melted coconut oil •1/2 cup honey
•2 eggs •1 cup pumpkin purée •1/4 cup milk of choice •1 1/2 tsp. Pumpkin spice blend (and/or 1/2 tsp. Cinnamon; 1/2 tsp. Ginger; and 1/4 tsp. Nutmeg)
•1 tsp. Baking soda •1 tsp. Vanilla extract •1/2 tsp. Salt •1 3/4 almond flour
It’s totally optional but I added cranberries. You can put In chopped walnuts, chocolate chips or raisins whatever you like!
Oven at 325 F 55-60 min *In a bowl add and whisk oil, honey, and eggs. *Add and whisk pumpkin purée, milk, spices, baking soda, vanilla, and salt. *Add flour. Once it’s all mixed in there throw in your walnuts, cranberries etc.
Throw in the oven and enjoy! 😘. P.s. the last picture isn’t complete cause the girls got a little too hungry during the photo shoot. •
