We are not new to baked oatmeal, but this one is new to us. This is a coconut baked oatmeal with added blueberries 🍽 I'll share the link with anyone who asks 😄 I originally got the link from @rungryhealthcoach back in October and am only now making it!

Good morning beautiful people ! If you are not one of them, change it. What comes around, goes back around! 🙌🏼🙌🏼💞💞 Would you fancy easy-peasy banana bread recipe. Only few simple ingredients 👍🏽makes healthy snack or even breakfast. Get out your food processor and put in: 2 cups of rolled oats, 3 medium bananas (ripe&mashed), 4T honey (or use any other sweetening stuff), 1t baking soda, pinch of salt&cinnamon, 2 large eggs, 1t vanilla extract, 2T melted coconut oil. Mix it until smooth,fold in handful of walnuts&dried cranberries (optional). Pour in bread tin with baking paper, sprinkle some more cinnamon 👌🏽Bake in 180'C for 25mins (or until toothpick is dry). Baked Banana Oatmeal on repeat lately 💯 Seriously can't get enough of this recipe. Gooey on the inside with a nice crust on the outside... need I say more?? 🤤
Preheat oven to 350F, and spray a medium sized ramekin with cooking spray and set aside. In a mixing bowl, whisk together 1/2c oatmeal, 3/4c unsweetened almond milk, 1 tbsp almond butter, 1 tsp cinnamon, 1 tsp baking powder, and 1/2 a sliced banana. Once all ingredients are incorporated, pour mixture into the ramekin and bake for 30 minutes. Top with more almond butter and enjoy 😊
Baked oatmeal is great for weekends which is why I love to make it on fridays!! It's already ready to be devoured come Saturday morning! Today I made peach 🍑 baked oatmeal for my little charge. Freezes great and lasts about 4 days in the fridge so it's also good for meal prepping as well. Added plus is there is no added sugar. The only sugar in this recipe comes from the peaches themselves.
16 oz frozen organic sliced peaches defrosted and chopped or two cups chopped fresh peaches whichever you prefer
2 cups old fashioned rolled oats
1 teaspoon cinnamon
1 teaspoon vanilla
1 ripe banana 🍌 cut into thin slices
1 teaspoon baking powder
2 cups milk
Directions: preheat oven to 375 degrees. Mix all dry ingredients in one bowl. Spray baking dish well and line bottom with banana slices. Sprinkle a handful of peaches over banana. Sprinkle evenly about half of your dry oats bowl. Sprinkle most of peaches over and pour remaining dry ingredients over peaches evenly. Sprinkle remains peaches. Pour wet ingredients evenly over dish and tap very well so it reaches the bottom. Bake for 35-45 mins depending on oven and enjoy!
