Chocolate Olive Oil Donuts with Orange Glaze & Sugared Rosemary
I partnered with my friends over at @luciniitalia to create a sweet winter treat with their new versatile Everyday Extra Virgin Olive Oil made with 100% Argentinian olives and these donuts are what I dreamt up! The chocolate donuts are scented with rosemary and the glaze has just a touch of orange zest for a flavor combination that is simply amazing - and who doesn't love the look of sugared rosemary, so festive!

Here is the recipe:
for the donuts:
1 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa, sifted if lumpy
1 1/2 teaspoons baking soda
1/2 teaspoon fine sea salt
3/4 cup granulated sugar
3/4 cup brown sugar
1/2 cup Lucini Everyday Extra Virgin Olive Oil
1 1/2 cups water or coffee
1 tablespoon cider vinegar or white vinegar
1 tsp very finely chopped rosemary
for the glaze & garnish:
1 cup powdered sugar
1/2 tsp orange zest
3 tbsp water
15 rosemary sprigs (about 1.5 - 2 inches in length)
1/2 cup simple syrup
1/4 cup sugar
for the donuts:
Heat oven to 350 degrees F.
Whisk together flour, cocoa, baking soda, salt & granulated sugar in the bottom of a large mixing bowl. Add brown sugar and olive oil, and whisk to combine. Add water and vinegar and whisk until smooth. Finally, add the finely chopped rosemary and whisk to incorporate.
Fill the wells of a donut pan 1/2 way with donut batter. Bake for 12 minutes. Cool the donuts in the pan on a wire rack for 10 minutes, then gently loosen and release each donut onto cooling rack to cool the rest of the way. Repeat until all of the batter is baked, this should yield about 15 donuts.
for the glaze & garnish:
While the donuts bake, dip small sprigs of rosemary in simple syrup, set on a rack to to drip dry. Once rosemary is slightly tacky, dip each sprig into the sugar to coat with crystals and return each sprig to the cooling rack to set.
