Before Little Bee came I tried to be organized by getting some extra meals in the freezer... little did I know she’d be almost a month early! But I did manage to get a few things in the freezer ahead of time:
1. The BEST cheese sauce from @modcuisine for Mac n Cheese, veggies, etc.
2. Butternut squash stuffed shells from @melskitchencafe
3. Beef stew from @kitchen_door
4. And even some dessert - our favorite oatmeal cookies from @cookiesandcups that I blogged about a while back (although these are already gone now 🙃) Still thinking I’ll try to make extra food when I can to freeze for the coming months - any suggestions?
Right before the holidays, the lovely @rezelkealoha invited myself and a group of ladies over to her home for small brunch bites, a mimosa bar and one EPIC cheese board. We had such a great time chatting about food, photography, blogging and everything in between.⠀
Meeting other bloggers in the food and drink space has been one of the best things about starting this little digital home of mine. I'm hoping to meet and share with many more in 2018—a major goal of mine (and sometimes daunting for my introvert self).⠀
While I was there I whipped up a cocktail I've been wanting to post on the blog for a long time—the classic Last Word—which, surprisingly, many don't know of. All of these ingredients are worth having as staples in your home bar, and ones you'll use often. This drink goes down a little *too* easily, and is a crowd pleaser.⠀

The Last Word⠀
1 oz dry gin — I used @tanqueraygin
1 oz green chartreuse⠀
1 oz maraschino liqueur⠀
1 oz fresh lime juice⠀
Combine all ingredients in a shaker filled with ice. Shake until very cold, about 20 seconds. Strain into a chilled coupe glass. Garnish with a luxardo maraschino cherry.⠀

Mini Greek frittatas to make your mornings a little easier. Make them on Sunday and enjoy throughout the week if you’re anything like me and have no time to make breakfast during the week! Just warm them up and eat then with a little Greek yogurt. Recipe 👇🏼
1 yellow bell pepper, diced
1 small red onion, diced
1 medium tomato, diced
salt and pepper to taste
1/2 tsp oregano
8 eggs, beaten together
1 cup spinach, chopped
2 tbs fresh basil, chopped
1 cup feta cheese, crumbled
Preheat oven to 350 degrees. Spray muffin pan with nonstick cooking spray. In a large skillet heat olive oil over medium high heat. Saute the veggies for 3-5 minutes until slightly soft. Add oregano and salt and pepper to taste. Add sauteed veggies to the bottom of each muffin pan.
Whisk eggs with spinach, basil and feta cheese and fill muffin tin with egg mixture and gently mix together. Bake in oven for 10-15 min until egg has set. Garnish with fresh basil and parsley and enjoy!

BRUSSELS SPROUTS SALAD // Shaved Brussels sprouts with loads of grated Pecorino Romano, pom seeds, toasted and cracked almonds, sesame seeds and chicory chiffonade tossed with evoo and a big squeeze of Meyer lemon. For this salad, I find it’s best to pump up the salt (cheese) and the sweet (pom seeds) for best results! It’s got an awesome texture and the almonds provide the most satisfying crunch. I’ll be serving this for dinner with some leftover roast chicken and roast potatoes! Happy 🐪 day, friends! 💚

Chicken pilau with potatoes and a side of fresh mint raita. Winning leftover dinner, made with a quick spicy roasted chicken, added potatoes and water to create a stock into which the rice was simmered. Can you believe this was out of my freezer? Made it a few weeks ago and had enough to set aside for our dinner yesterday. It tasted as fresh as the day it was made and no one would know any different!

you guys! i just made oatmeal that is like dessert but actually kind of healthy! i added 2 T of cocoa powder & 2 t cinnamon while the oats were cooking. in the bowl i stirred it together with half+half, a bit of maple syrup & topped with more cinnamon 👌🏼 next time i might put marshmallows on top...

Anyone out there afraid of poached eggs? 🙋🏼♀️Do you love them in restaurants but have no freaking idea how to make them on their own? I was there too, and after many, many, many failed attempts I’ve perfected them and now add them to everything. You all know how I feel about eggs...We’re in a deep, committed relationship that may or may not be one-sided. Trust me, once you learn to poach them perfectly you too can experience this same sort of everlasting love ❤️. 2018 is shaping up to be a year where I just wing it in the kitchen. (All of the colorful carrots get thrown in a cast iron skillet with harissa, s+p, and orange juice from the orange you have in the fridge that you zested the day before. Cover and cook until fork tender. Remove cover, add some vinegar (my go-to is sherry) and allow juices in the pan to caramelize and carrots to char. Put on a platter and season with flaky sea salt, more pepper, and olive oil. Add the half an avocado you have in your fridge along with the last little bits of goat cheese because in 2018 we find ways to use everything. Sprinkle seeds and nuts on top (whatever you’ve got). Pat yourself on the back and then eat.)
