I'm going to try my hand at Barrel Aging some Gin. I know of other barrel aged spirits, but I'm curious to see how the flavor profile changes with the charred barrel. We'll see in about 10 months I guess.

What sets our UpRoot Barrel Aged Gin apart from the rest? Spicy and sweet botanicals like galangal, szechuan peppercorn, and wild cherry bark. Then rested on in-house toasted barrel staves.
Day 7: Giniversity Barrel Aged Gin. Ok so I’m super excited about this one and I just know I’m gonna go out and buy this (p.s. anyone know anywhere in Sydney where I can buy this?) So this little number came out of the Margaret River, WA, and was aged in old French Pinot Noir barrels, hence the orangey/pinky colour. On the nose this gin displays a bit more intense alcohol aromas as well as notes of juniper. But in the palate this gin is something else! It’s super flavourful and honestly I cannot shake the fact that it tastes like the lemon lime bitters I used to drink as a kid! The palate displays flavours of lemon, lime, spices including cinnamon, and just subtle hints of oak. We served this one with @fevertreeaustralia Elderflower Tonic and a lime wedge. The juniper is softer and you get more notes of vanilla and caramel. It can be used in your traditional Gin drinks or substituted for recipes that call for Whiskey or Bourbon. Barrel aged gin has had mixed reviews. Gin is usually enjoyed as an aromatic, bright, fresh and delicate spirit. Does it make sense to add oakiness, caramel hints and richness to it?
Firkin Gin, London dry style gin aged beautifully in port, sherry and oak casks. They do a Islay cask one too which I didnt have a chance to try. Firkin Gin has kept the refinement of gin with a touch of barrel aged goodness.
We should be trying them all naked.
