Homemade bread for a delicious toast early in the morning. I had never given a thought at what might be inside my supermarket bread. I have to admit that I rarely consume processed foods except for yogurt, cheese, cereals and the odd tinned sauce. The rest is all made at our kitchen using fresh ingredients. I love eating real food and you will not see ready meals at our house. Hence why there are not many food labels for me to check when grocery shopping. I do check yogurt and cereals, but I had always thought "bread is bread, what can there be on it?" ⛔⛔ WRONG. I found lots of preservatives and additives including things like palm oil and alcohol. WTF??!! So we have been making our own bread for the last 2 weeks. And I have to say, I couldn't believe how easy it is to make and how much better than the supermarket one it is! If anyone wants the recipe just ask 😊
It might not look super beautiful, but this shit is sooo good 😛😋 it helps me with my Mexican food cravings because I can never get enough of queso and burritos. But, it’s fun to make exciting food with the seemingly basic food that’s in the BBG food guide. The portions depend on your own serving sizes for the meal, but I cook corn and red onions, toss in shredded chicken that I’ve made for the week to heat up, cut up pepper jack cheese and let that melt, and lastly stir in a little bit of salsa for flavor. And it’s all in one skillet which is nice for cleaning. It is so delicious! This is actually the first time I’ve created a rice bowl with it! i’m in the ‘I need a nap’ phase, so i’m trying to keep my food good and yummy so I can keep my energy up. a simple taco rice bowl was just what I needed! (and husband said it’s the best meal we’ve had in any of our whole30s)
- cauliflower rice with jalapeños and fire roasted tomatoes
- ground beef with homemade taco seasoning
- shredded iceberg lettuce
- more fire roasted tomatoes 😋

Paleo Roasted Coconut Chicken Tenders with guacamole and @organicgirl baby arugula 🤩 These were such a hit with everyone in the house, including my two-year-old 🙌 So good, you gotta try these! And they make good leftovers 😉
- 2 lbs organic chicken tenders (can get at @wholefoods)
- @ottos_cassava_flour cassava flour (as needed, about 1/2 cup)
- 2 @vitalfarms pasture eggs
- shredded unsweetened coconut (as needed, maybe 2 cups)
- salt to taste
Arrange three plates. First with cassava flour. Second with the beaten eggs. Third with shredded coconut. Salt chicken tenders, and then dip in each plate’s content (in that order). Grease a baking dish with @primalkitchenfoods avocado oil. Bake chicken tenders at 400 degrees, flipping halfway through. Enjoy! 😋
Stocked up on all the goodies to keep me on track while traveling for work this week 👍🏻 I find planning some meals ahead like this is so important when traveling because I’m usually out of my element working extra long hours at the client site and in meetings all day so I need to make sure I’m fueling myself properly, especially while training. For breakfast I plan to make oatmeal with @rightfoods superfood packet, berries, @justins almond butter, @traderjoes grainless granola, and @vitalproteins collagen peptides (not pictured). Snacks will be @perfectbar or @larabar (because options 💁🏻♀️) and bananas. Since I am traveling with a team this week I didn’t get to pick the hotel but I called ahead to make sure they have both a fridge and microwave available for my room. Pro-tip: most hotels have complimentary fridges and microwaves available on request if your room doesn’t already have one, you just have to ask! Ready to take on the new week, who’s with me??
Who else had the green smoothie bowl this morning?! SO GOOD! But I swear every time I start this program I forget how big the meals are - I use kitchen scales to make sure I’m doing the exact amounts it says but I wasn’t even half way through this and I was stuffed! So, I cooked a fairly healthy dinner for the family today. Cod, pasta, broccoli, peas, tomato and some green pesto to add some flavour. I was supposed to do #legs &cardio #week1 of the BBG world challenge, but I’ve been having fevers all day so didn’t make it. Hopefully I will finish the 3 resistant workouts so I can say that I’m still in!
