🍃🌺 Evening guys. Well today i built in an extra rest day to my training programme as my legs feel knackered after track last night. So instead of running ive taken a hot bath, changed into my PJs and had a relaxing evening listening to music (and singing very badly at the top of my voice 😂!!) Tonights dinner is a vegan beetroot and quinoa burger in flatbread, corn, avocado and tomato couscous salad, mixed leaf salad, with a pea and mint dip! Wishing you all a lovely evening! 🌺🍃

Burger Project Review. I got 'The Aussie' burger together with a fries and drink. 'The Aussie' is a burger with a grass-fed beef patty, beetroot, cheese, onion, pickles, tomato, lettuce and secret sauce. The 'Aussie' element in this burger would have to be the beetroot. Chewing into this burger was a delight as the beef patty was tender and thick. The beef patties here are cooked to medium which is what leads to the amazing texture and juiciness of the patty. The bun was tasty and it was a brioche bun. The beetroot added a nice sweet tang to the burger and the rest of the veggies were crisp and fresh. The fries were crispy and not too salty. I would recommend this place if you're looking for a slightly more upmarket burger spot. There is also a free flow of tomato sauce and American mustard so that is a huge plus. 👍

Beetroot, Kale and Quinoa Burger with Summer Squash and Avocado
Suitable for Vegetarians and Vegans (omit the Cottage Cheese)
I recently purchased these @goshfreefrom Beetroot, Kale and Quinoa Burgers from @hereshealth Health store.
I normally like to make my own homemade burgers but the list of healthy natural ingredients in this product really impressed me.
They are vegan and dairy, gluten, nut, egg and soy free.
These Beetroot Burgers are packed with kale and chickpeas and have a lovely hint of mint.
I baked it in the oven for 15 minutes until piping hot.
I served it with Spiralled Summer Squash/ Courgette, Rocket and Watercress, Sugar Snap Peas, Avocado, Saurkraut (a source of Probiotics) and some Cottage Cheese for extra Protein.
I drizzled the whole lot with some Extra Virgin Olive Oil.
It is important to always add a source of healthy fat to your salads. Here, my fat intake was covered by the Avocado and Oil. These fats will help your body absorb Fat Soluble Vitamins A, D, E and K.
Summer Squash or Courgette is high in Antioxidants and Vitamin C which will keep your immune system healthy.
They are high in a fiber called pectin which helps improve cardiovascular health and lower cholesterol naturally.
They are rich in Potassium, B vitamins and Folate and are a great anti inflammatory food.
I love to create spirals with them using my Spiralizer. These can be bought online or in most kitchen ware stores.

Check out this monstrosity...and no meat or dairy involved?!!! Huh?! This is my beetroot, black bean, brown rice, quinoa and sweet potato burger in my homemade rye burger buns. It rolls off the tongue so easily 🙈. I saw a picture a while ago on @15min_mom 's feed of a similar burger and almost drooled at the sight.
This burger has fed the whole family including the baby. I wanted to make a burger that was a complete balanced meal - and this is just that. It's got masses of fibre, protein, healthy carbs and iron - all ➡️💪.
Burgers to my other half generally equals meat. I needed to convince him and the kids that they could still enjoy a meatless burger and this did the job! Earlier in the week I mentioned that I was keen to get my children to eat more beans and this was a perfect opportunity for me to put this to the test. I internally high fived myself as I saw the 5 year old clean his plate 🤚...
2 small raw beetroots - finely grated and water squeezed out of it
4 cloves of garlic
400g black beans
150g cooked brown rice
1 large sweet potato - cooked
50g quinoa flakes
Handful of coriander
Salt and pepper to taste
1. In a food processor, blitz the garlic first then add everything else at the same time and blitz till combined. Leave the mix to sit for 10-15 minutes to firm up a bit.
2. Shape into burgers and shallow fry in a teaspoon of oil in a non stick pan. Cook for 5 minutes on each side. Serve with whatever you fancy, in a bun or just as it is.

Roasted beetroot gives your burger patties lots of colour and a delicious wholesome taste. I have mixed in some kidney beans and wild rice for more depth of flavor.
The burger construction uses rainbow colored additives and my home-cooked black buns.
BEETROOT & WILD RICE PATTY (8 patties)
▪️2 medium beetroot, roasted and chopped
▪️225g of tinned kidney beans, rinsed and mashed
▪️½ cup wild rice, cooked.
▪️½ cup mix quinoa, cooked.
▪️2 flax eggs ( 2 tbsp ground flax seed + 6 tbsp water)
▪️½ red onion, diced.
▪️2 cloves of garlic, finely chopped.
▪️1 tsp smoked paprika powder
▪️1 tbsp coconut oil
▪️1 tbsp lemon juice
▪️2 tbsp parsley, chopped
▪️Salt and pepper to taste... .
Pre heat the oven 180 C / 350 F.
To make a flax “egg”, mix the ground flax seed with the water in a small bowl. Let the mixture soak for 5-10 minutes. This mixture will help to bind the ingredients together.

Place the roasted beetroot into food processor and blend into a coarse texture.
In a large bowl, place the beetroot and all the remaining ingredients and mix well to combine together.
Shape into 8 patties and place onto a baking tray with baking paper.
Spray the patty with a slight amount of oil, and bake for 15 minutes on each side... .
