It's pumpkin season, and it would not be perfect without some healthy and delicious pumpkin chocolate chip muffins. Eat them as a healthy snack with your coffee or tea guilt free!
1 cup gluten free oats (or use store bought oat flour)
1 cup pumpkin pure (240 gr)
1 cup greek yogurt (220 gr)
2 large eggs
2 scoops pumpkin spice protein powder (or vanilla protein powder with 11/2 tsp pumpkin spice added into it)
1 tsp cinnamon
1 tsp baking powder (aluminum free)
1/2 tsp baking soda
1/2 cup dark chocolate chips (I use the Enjoy Life dairy free brand)
Preheat oven to 350F OR 180C
Add the oats to a food processor or blender until flour forms
Add pumpkin, greek yogurt, eggs, protein powder, cninammn, and blend till well combined.
Stir in chocolate chips
Distribute to muffin liners
Bake for 15-20 minutes until toothpick comes out clean.
